The "ring" series is an SDGs sake. (Please Google for details).
It is a project by a farmer, a sake brewery, and the Kobe Shimbun, and is sold by Fukuju, Fukyu-Nishiki, Banshu-Ichiken, Shirasagi-no Shiro, Morinori, and Ozeki.
I remember that all of the "Ring" series were delicious.
I thought it tasted modern or a little different from each brewery's regular products.

According to the official website, Kuzo is sold by Kanno Shoten in Kamakura 😊Hamafukutsuru may be available at Aeon, but I think the taste is commensurate with the price 🤔.

Kouzutsuru is often seen in Hyogo. They also sell packaged sake at Yamaya, and are considered a major manufacturer in the northern part of Hyogo.

The BLACK recommended by Nemuchi-san is 25°, so it is treated as a miscellaneous sake, but it was rich and tasty. I didn't feel the high alcohol content, so it's a dangerous one. If I see it again, I may buy it.
The Daiginjo is a Yamahai, but it has a gorgeous and beautiful taste.
The Hikokikumo I had a while ago was also delicious and I wanted to revise my impression of Kasumitsuru 🤔.

The hiyaoroshi was easier to drink than expected. I thought it would have a sense of maturity, but there was none. However, it is said to be aged for 2 years.
The junmai sake was sold out, but I was allowed to taste it.
It is 6 years old and has a strong sense of maturity. It was just like I imagined Takezumi to be.
The two Junmai Daiginjos were not gorgeous and had a more mature taste of a food sake type.
The recommendation is full of Hyogo sake, but the number of ★ has increased even more 🤣.

Tajima Junmai was recommended by Nemuchi. It was gorgeous and sweet, and I thought it would be good to buy.
Kakoya is the most fruity and aromatic. I asked him if it was 1801 yeast, and he was surprised, but it seems to be a home-cultivated yeast based on 1801.
The Daiginjo had a perfect taste.
I asked the owner to put it on the table with Tajima's Junmai sake Haretoke. The owner doesn't seem to like gorgeous sake, so I'm not sure if he'll put it there 😅.

If you are looking for strong rice sake that you can buy in Tochigi, you might be able to find it around Takayuu or Chiyomusubi in Tottori prefecture 🤔.

Hyogo Sake85 was sold out, but I was allowed to taste it. It has a sweet taste but is very robust.
Personally, I enjoyed the yeast additive-free version.
Rinbi was easier to drink than I expected.
The sake they brought was generally classic.... I think the products for distributors are more modern.

Shugetsu is a sake that I ordered and drank in the past.

The hiyaoroshi was easy to drink without any sense of aging. I don't mean to be rude, but I was surprised at how easy it was to drink.

I think it might be my favorite sake from Shudzuki. Sorry I didn't buy it.

Kijoshu (noble brewed sake)
The Junmai Ginjo and Junmai Nama are both gassy and more modern than the labels suggest. The Junmai Ginjo is more acidic, which I prefer.
The hiyaoroshi is a hiyaoroshi version of the junmai ginjo nama-zake. It is the same sake but has a completely different atmosphere.
I was a little bothered by the smell of the kijoshu...
I bought the Junmai Ginjo Unfiltered Nama Sake, which made a good impression on me.
I forgot to try the sake with Mozart music 🎵.

The Namaiginjo had a classic feel but was also easy to drink.
The nigori sake was smooth and refreshing.
It was neither sweet nor spicy 🤔.
I think Kamiyui is basically rare, so I bought the 300ml Ginjo Nama.

Unlike the Takashi Maya Sake Festival, Tanaka Sake Brewery had a serious lineup of a wide range of high-end sake. They did not bring their famous sword Masamune this time 😥.

I've visited this place twice, and the second time the Governor of Hyogo Prefecture was here, so I got caught up in the hustle and bustle and tasted the same expensive one the Governor was drinking 😁.
The Daiginjo Fukuro-hozuri was fruity, without any alkaloids, and extremely tasty. The Daiginjo Fukurohuri is usually fire-aged, but for this event, they served it as Fukurohuri Nama-zake. Hankyu asked them to price it at 5,000 yen, but they brought it at 3,980 yen because they were serving it at this price in their hometown.
Enyui is made with 20% polished rice! I had heard rumors about it but never thought I could drink it.
The ring is an SDGs-style sake that is cyclical. It is a joint project between sake breweries, rice farmers, and the Kobe Shimbun, and more and more breweries are joining the project every year. I think it was an easy-drinking sake.
Rare Generation is a Tenbin pressed sake. This was the one I was looking for this time, so I bought it without hesitation.

Nakadori is fruity but not enough for me?
The mizu-hashiroshi brewing type 2 is a lighter version of mizu-hashiroshi because the regular mizu-hashiroshi is too strong. It is not like mizu-hashiroshi and easy to drink, but maybe not enough?
The brewer explained in detail the difference between Type 2 and the regular version. I bought and drank the regular version in the past, but I couldn't drink it because it was too aged 💦.
After joining Mr. Nemuchi and Mr. PyonPyon, I revisited the Daiginjo and tasted it again, but it was gorgeous and delicious.
Someone was talking about Nippon Soul, so I asked if they had it at Haretoke or Daimune. The brewery said that only the strongest liquor stores carry it 🤣.
The customer beside me reacted like "Ohmune" (lol).
Right after drinking Nihonshin, the recommendation list was full of Ehime sake 🤣.
I didn't know about all these breweries!

Well, I think that the raw sake I bought at a brewery on the Okura Coast before was also a classic type of sake.
Personally, I enjoyed the plum wine the most 😅.
According to the brewer, people in Wakayama drank it and praised it highly.

The Inami Sake Brewery, which we have drank several times in the past.
The samples we tasted were

The hiyaoroshi has a slightly matured taste.
The old sake has a beautiful taste that does not remind you of 7 years of aging!
I drank it with dried figs.
My personal favorite was Yamada Shizuku, which was just as good as it was 4 years ago!

It's light, sweet and sour. It's a refreshing summer sake with a grape-like sweetness. It also has a strawberry taste.
The acidity is more pronounced than the sweetness.
It is easier to drink than the apple-like aroma and sourness of honjozo, but that is about it.
I chose this bottle to get free parking.

Chitose seems to be a series of lactic acid-free, wood-bottled sake. Gentle sweetness and woodiness. The bitterness is impressive. Fullness and richness. If you drink it blind, you probably can't tell it's Aizan.

This is the fourth bottle of sake I bought at Hyogo Sake EXPO 2022.
The label was originally missing and the brand name was not written on it, so I registered it as Kiku Nihon, a representative brand.
The brother who gave a light-hearted talk said it was his first time to attend the event and that he had never been out of Kasai for 200 years. There was also a petite young woman, who seemed to be the president of the company.
