Today I opened a bottle of this one that I found at a supermarket that opened the other day. Kamo Nishiki Junmai Ginjo no Tanabakumi ❗️ I had never heard of "funabakumi" before, so I looked it up and found out that it means that a liquor store actually goes to the brewery and pumps freshly squeezed sake directly home to sell at the store. When I actually tried it, it was fruity, juicy, shwashy and delicious 😋 Today I had a lot of baijiai... 🐚.

We opened a bottle of refreshingly juicy Kaze no Mori ALPHA Summer Night Sky for the summer heat just after the end of the rainy season. ❗️ It is a gem that combines the lightness of low alcohol with a deep and rich flavor after a painstaking brewing process using 70% polished rice from Akitsuho in Nara Prefecture and Bodai yeast. Today, we served sashimi of barracuda & ishimochi and grilled sweetfish that is in season 😋.

Today is my second son's birthday. To celebrate his birthday, we will open a bottle of Takeyuki's summer sake made from fresh yeast. The rice used was Hitanishiki produced in Ibaraki prefecture. It is bottle-fired right after pressing, so you can feel a hint of gas in the acidity 😋 Today we went out for yakiniku at the request of the kids: ❗️

This is the second summer sake to be opened this year. This sake was brewed with Sakonishiki rice grown with less pesticides and chemical fertilizers, and was paired with sashimi that included aji (horse mackerel) and salmon (salmon), both of which have excellent fat content 😋 Today we will be drinking a sake comparison glass that my wife and children gave me for Father's Day 😊.

To start off the summer sake, we opened a bottle of local "Haneya Summer Junmai Ginjo"! Hanedaya brews its sake with water from the Tateyama mountain range, making it a very popular summer sake 🤩 The low alcohol content of 14 degrees gives it a light touch and a refreshing ginjo aroma. Today we have aji (horse mackerel), which is in season, and tuna, which will be in season from now on in the Sea of Japan. The tuna is the offspring of the tuna known as "Meji-tuna" 🐟.

We opened a bottle of Burozumi Active Nigori Nama Sake, a full-bodied sake, for our child's birthday. The lid blew off to the ceiling when I opened the bottle as a birthday cracker 🎉Since the sake didn't blow off, I'm safe 😅The sparkling fizziness, concentrated umami and a hint of sweetness are very pleasant, and the balance of rich acidity and bitterness while retaining sweetness in the latter half is very good 😋 Thanks to a request from my child, today we had a petit luxury platter as a snack 😋. The floral aroma and sourness produced by the rose yeast is followed by a light and sweet taste 🍶Sakura sea bream grilled with salt in the middle of the season for the fish-loving wife and octopus sashimi for the octopus-loving child 🐙The crab miso🦀 is my favorite food so it is a must😋!

Today, after GW is over and I can take a break from work, I opened a bottle of Abegreen brewed with "Raku-fu-mai" sake rice from the Gohyakumangoku lineage as a reward for myself. ❗️ The yeast used is the Niigata Prefecture yeast G9, which is also used in Natsu-shu Blue. It has an excellent balance of sweetness followed by sourness and bitterness that is typical of orikarami, and of course sake goes well with it, but sashimi also goes down a treat 😋.

As my job has no connection to GW, I opened this bottle on my day off, feeling like taking a little trip at least. This sake is from the Kuroemon Juroemon 16th brewery and is made from "Aiyama," a popular sake rice produced in Hyogo Prefecture. The moment you drink it, it is exactly as described on the label: "The royal road to sweetness! The lingering aftertaste is a perfect balance of richness and freshness 😋 Today I'm going to cut corners & go a little junky with a local Peyoung with a mini size of a spoiled pork cutlet 😅.

Drink it to thank Hokuriku for the support they gave us 📣📣The bottle we will open today is a gem of a collaboration between the rice difference series sake brewer's rice Tosa Urara and CEL-24. It is very fruity and sweet, but its sweetness is refreshingly sweet and refreshing. We enjoyed it with a glass of wine 😋The firefly squid, which was caught in great abundance this year, was served as sashimi by itself 🦑.

Today is Buri Shabu Festival with the whole family as the kids are going home tomorrow. The wife, who loves warmed sake, requested Kuzuryu's heated sake to go with the shabu-shabu. The cold-aged junmai sake was a mellow gem. Today we had it warmed to human skin.

Yesterday was supposed to be the main celebration for my child's graduation ceremony, but the main actor, my child, went out for yakiniku with his friends...so we changed our plans. I gave this to his cat-loving wife for White Day (14%). The label is cute, but the rich sweetness and umami of the sake is beyond imagination.

We open a bottle of this once every four years in leap year. We found a bottle of Akabu, which is not sold very often in our local area, and bought it immediately. It was lucky that it was one of the last bottles available. It was a very well-balanced bottle, with a fruity and robust flavor, and a clean aftertaste. Today I will enjoy it with swordfish kelp sashimi and crab miso... 😋.

Today we opened a bottle of Kuroryu Dorokuchi, the third bottle we acquired during our recent visit to Fukui. Compared to the Kutouryuu Dorokuchi, the mouthfeel was very smooth, and the mellow sweetness and full-bodied flavor spread out from within. It has a subtle gasiness and a fresh lightness that is only possible with freshly squeezed sake. After swallowing, a soft lingering aftertaste drifted in, and was smoothly settled by a slight bitterness. It was a charming gem with a delicious taste that made me swoon. Today, at the request of my child, I served it with grilled meat... 😋.

Hanagaki's nigori sake is a year-round product that is fire-aged. Take a sip at room temperature and you will find a "thickening" or "mellowness" followed by a "sweetness". At the end, you will be immersed in the lingering taste of rice. Ogo (check) is also recommended. Tonight, we will be tantalizing our taste buds with Noto's Tsuridara Noko Dashi covered with cod roe 😋.

Today, I opened a bottle of "Kutouryuu Doroguchi", a wintertime favorite that I purchased on a recent trip to Fukui. It is the only Kuroryu sake with a slightly sweet taste with a negative sake strength, and it is delicious... a gem that will surely make you drink too much! Today, we boiled a small but very plump fresh snow crab at home and enjoyed it with hot crab miso... 😋.

I found Kaze no Mori Akitsuho 657, the face of Kaze no Mori, which is not sold in my hometown and which I had wanted to drink for a long time, so I got it without hesitation! I was impressed by the depth of flavor, with its light yet delicious taste and the gaseous sensation that only unfiltered and unpasteurized sake can give.... To accompany the Kaze no Mori, I chose a sashimi of shio no tago (Hiramasa) from the morning! The texture of the fish is unique to the morning fish!
