Today, after GW is over and I can take a break from work, I opened a bottle of Abegreen brewed with "Raku-fu-mai" sake rice from the Gohyakumangoku lineage as a reward for myself. ❗️ The yeast used is the Niigata Prefecture yeast G9, which is also used in Natsu-shu Blue. It has an excellent balance of sweetness followed by sourness and bitterness that is typical of orikarami, and of course sake goes well with it, but sashimi also goes down a treat 😋.
