Today, on my own birthday 🎂, I opened a bottle of Hoho Mita Hatsushibori ❗️ to be the first to taste the vintage of the rice harvested that year and to celebrate my birthday as well 😋It was very delicious 😋 Today, my birthday, I served it with raw oysters🦪 which my wife also loves! ... 😋😋.

To conclude the past memoirs, I bought two types of Okuhida Shuzo Junmai sake with Hirayu no Mori label at a day spa the other day 🍶I really wanted to drink them right there after the bath, but I gave up because of 🚗 and opened the bottle immediately after I got home. ❗️ I enjoyed the junmai nigori, which has a light acidity and a hint of sweetness with a strong rice flavor, and the dry junmai, which is refreshing, crisp, and light to drink 😋.

Again, a reminder of the past! The bottle opened that day was "Kanagaso," a sake brewed by the Naohiko Noguchi Research Institute, which expresses healing from nature, and as the concept of this sake is to add color to casual everyday life, it was a delicious gem that left a gentle aftertaste after the calm flavor spread across the palate😋🦑 with fresh, morning-caught bluefin squid as sashimi.

Memorandum of the past (3) On this day, we opened a bottle of this luxurious sake made from "Kuro⿓ Jungin", which we had not been able to find the right time to open since we bought it. ❗️ This excellent product, made from 100% Gohyakumari from Fukui Prefecture, tasted like a new sensation, rich and sour, like ripe fruit. The accompaniment was a platter of "yellowtail and trout," which are synonymous with autumn flavors.

Past memorabilia (2) When my child went back home, I opened a bottle of Kaze no Mori's limited edition "ALPHA1 DRY", which is the only dry sake from Kaze no Mori, and its theme is "the key to the next chapter". As the theme suggests, the aroma and taste reminded me of the beginning of a new story spun by Kaze no Mori.

I've been busy with work and haven't been able to check in, so this time it's a reminder of the past. Junmai Ginjyo Genshu Kameizumi Shuzo's Junmai Ginjyo Genshu Takayuki 63 Hiyahoroshi. It was a great dish with a fresh fruity taste and matured flavor 😋This day we had a sashimi platter & roast pork (requested by my child) 🐷.

Today, I will try for the first time this year, saury, which is synonymous with the taste of autumn.❗️ To go with my first fish, I will try for the first time "Katsuma"❗️, which is also a gem I purchased at a distributor the other day 🤩. Although it is a special honjozo, Gohyakumangoku from Nanto region in Toyama is polished to 55% of ginjo-grade sake 😋 It has a light and refreshing taste, with no corners in the mouth, and its tight and beautiful flavor enhanced the flavor of the saury 😋.

Today we will open a bottle of "Chichin Puipui", a limited edition brewed with no additive yeast and brewed with Nama Moto. It has a sweet aroma, a mildly sweet and sour taste that spreads through a thick mouthfeel, and a moderately refreshing aftertaste. It was a very high-cost product in comparison of price and taste 😋😋 with Hiramasa & Salmon today 😋😋.

Before welcoming the autumn hiyaoroshi, we toasted with the last summer sake of the year 🍶 Today we opened a chilled Kuzuryu sake 🧊, a junmai hi-iru sake made with 65% Gohyakumangoku from Fukui Prefecture, and thickened to be enjoyed on the rocks. The first sip has a powerful flavor unique to sake made from pure rice. As the ice melts, the sweetness melts away, leaving a gentle impression 😋Today we will be serving it with niza-dai sashimi and our standard grilled hokke (hokke with salt) 😋.

Today, as the Bon vacation is over and work is winding down, we open a bottle of the summer version of Urasoko, a popular product from Hayaseura that we got on a recent visit to Fukui. ❗️ The oriki from the junmai series (junmai sake and junmai ginjo sake) is collected from the bottom of the tank, blended and bottled with the junmai honnou josumi sake. ❗️ The beautiful blue color and translucent white color of the label reminded me of the "ocean" of the Sea of Japan as seen from Mihama, Wakasa, The most interesting sashimi was the one I had never tasted before, the Higeodara (Alaska Pollack) 😋 The taste was a hit with the kids too!

Today I opened a bottle of this one that I found at a supermarket that opened the other day. Kamo Nishiki Junmai Ginjo no Tanabakumi ❗️ I had never heard of "funabakumi" before, so I looked it up and found out that it means that a liquor store actually goes to the brewery and pumps freshly squeezed sake directly home to sell at the store. When I actually tried it, it was fruity, juicy, shwashy and delicious 😋 Today I had a lot of baijiai... 🐚.

We opened a bottle of refreshingly juicy Kaze no Mori ALPHA Summer Night Sky for the summer heat just after the end of the rainy season. ❗️ It is a gem that combines the lightness of low alcohol with a deep and rich flavor after a painstaking brewing process using 70% polished rice from Akitsuho in Nara Prefecture and Bodai yeast. Today, we served sashimi of barracuda & ishimochi and grilled sweetfish that is in season 😋.

This is the second summer sake to be opened this year. This sake was brewed with Sakonishiki rice grown with less pesticides and chemical fertilizers, and was paired with sashimi that included aji (horse mackerel) and salmon (salmon), both of which have excellent fat content 😋 Today we will be drinking a sake comparison glass that my wife and children gave me for Father's Day 😊.

To start off the summer sake, we opened a bottle of local "Haneya Summer Junmai Ginjo"! Hanedaya brews its sake with water from the Tateyama mountain range, making it a very popular summer sake 🤩 The low alcohol content of 14 degrees gives it a light touch and a refreshing ginjo aroma. Today we have aji (horse mackerel), which is in season, and tuna, which will be in season from now on in the Sea of Japan. The tuna is the offspring of the tuna known as "Meji-tuna" 🐟.

We opened a bottle of Burozumi Active Nigori Nama Sake, a full-bodied sake, for our child's birthday. The lid blew off to the ceiling when I opened the bottle as a birthday cracker 🎉Since the sake didn't blow off, I'm safe 😅The sparkling fizziness, concentrated umami and a hint of sweetness are very pleasant, and the balance of rich acidity and bitterness while retaining sweetness in the latter half is very good 😋 Thanks to a request from my child, today we had a petit luxury platter as a snack 😋. Today we will open a bottle of "Rose Mind," which uses rose yeast cultivated from roses in Fukuyama City, Hiroshima Prefecture, perfect for Mother's Day🌹Tempôichi's excellent product was served to the delegates of the G7 summit held in Hiroshima. The floral aroma and sourness produced by the rose yeast is followed by a light and sweet taste 🍶Sakura sea bream grilled with salt in the middle of the season for the fish-loving wife and octopus sashimi for the octopus-loving child 🐙The crab miso🦀 is my favorite food so it is a must😋!

Today, after GW is over and I can take a break from work, I opened a bottle of Abegreen brewed with "Raku-fu-mai" sake rice from the Gohyakumangoku lineage as a reward for myself. ❗️ The yeast used is the Niigata Prefecture yeast G9, which is also used in Natsu-shu Blue. It has an excellent balance of sweetness followed by sourness and bitterness that is typical of orikarami, and of course sake goes well with it, but sashimi also goes down a treat 😋.

As my job has no connection to GW, I opened this bottle on my day off, feeling like taking a little trip at least. This sake is from the Kuroemon Juroemon 16th brewery and is made from "Aiyama," a popular sake rice produced in Hyogo Prefecture. The moment you drink it, it is exactly as described on the label: "The royal road to sweetness! The lingering aftertaste is a perfect balance of richness and freshness 😋 Today I'm going to cut corners & go a little junky with a local Peyoung with a mini size of a spoiled pork cutlet 😅.
