Today I opened a bottle of Yamamoto Junmai Ginjo Nama Nama Yoshi No.7 Yeast to compare with the recent No.6 Yeast 🍶It has a more gorgeous & fruity aroma, umami & beautiful acid balance than the No.6 yeast, I personally prefer this one 🤗 Today I will simply drink it with my favorite crab miso 🦀 and enjoy it with the famous Eiheiji crab pudding 😋😋. Today we opened a new sake called "Kachikoma" in hiragana ✨ We put as much heart and soul into our new sake as we do into our ginjo, even when it's freshly shiboritate.
Katsikoma, a natural and spunky beauty, has a "slightly dry" taste that soaks into the body smoothly 😆 We enjoyed it while praying that we will see it again next year. ☺️ Since it was so cold, we had a seafood hot pot 🍲 filled with the three most delicious seafood: oysters, milt, and cod 😋. with 😋!
Today we opened a bottle of the "Manjusen Limited Edition Series", a 100% Yamadanishiki, 100% polished rice, which we got at a local liquor store the other day. I have a feeling you will be able to enjoy the full flavor of Yamada Nishiki from tomorrow onward 😋 Accompanying the local sake is a local delicacy, "yellowtail sushi with yellowtail".
On our wedding anniversary, we opened a bottle of Saku Junmai Ginjo Z Label, which is made from Mie no Yume sake rice ✨The first Saku had a gorgeous and refreshing aroma, followed by a plump and full fruitiness that was delicious 😋 We served it in a wine glass to match the bottle and label design🍷.
To go with this wine, we paired it with oversized fried prawns 🍤 and a strawberry tart 🍓 from a famous local patisserie.

Merry Christmas 🎄, today we opened a bottle of "Hatsu Taban no Nakadori Edo Gaeri Version", a limited edition sake of the Shihashiri season based on Senkou Modern, the first sake of the season 😋. So today we will have 🍰 from Kenta🍗 and Ken's Cafe Tokyo 😁.
Today we opened a bottle of [Aomori Tasake Special Junmai Sake Nama], a freshly squeezed new special junmai sake that is only available during the winter season. ❗️ The aroma of fresh rice is typical of new sake. The fresh flavor from the slight fruity taste was delicious 😋🤩The first time to drink Tasake, we paired it with yellowtail radish🐟😋 made from Himi wild yellowtail, which Hokuriku is proud of, and Engawa kimchi😋 as an added bonus.

Today we opened a bottle of Mimuro Sugi Dio Avita (Mimuro Sugi Dio Avita), which we purchased at a new liquor store we recently opened.
It has a low alcohol content but a full flavor, with a fresh and luscious aftertaste.
To conclude the past memoirs, I bought two types of Okuhida Shuzo Junmai sake with Hirayu no Mori label at a day spa the other day 🍶I really wanted to drink them right there after the bath, but I gave up because of 🚗 and opened the bottle immediately after I got home. ❗️
I enjoyed the junmai nigori, which has a light acidity and a hint of sweetness with a strong rice flavor, and the dry junmai, which is refreshing, crisp, and light to drink 😋.
Again, a reminder of the past!
The bottle opened that day was "Kanagaso," a sake brewed by the Naohiko Noguchi Research Institute, which expresses healing from nature, and as the concept of this sake is to add color to casual everyday life, it was a delicious gem that left a gentle aftertaste after the calm flavor spread across the palate😋🦑 with fresh, morning-caught bluefin squid as sashimi.

On this day, we opened a bottle of this luxurious sake made from "Kuro⿓ Jungin", which we had not been able to find the right time to open since we bought it. ❗️ This excellent product, made from 100% Gohyakumari from Fukui Prefecture, tasted like a new sensation, rich and sour, like ripe fruit. The accompaniment was a platter of "yellowtail and trout," which are synonymous with autumn flavors.

When my child went back home, I opened a bottle of Kaze no Mori's limited edition "ALPHA1 DRY", which is the only dry sake from Kaze no Mori, and its theme is "the key to the next chapter". As the theme suggests, the aroma and taste reminded me of the beginning of a new story spun by Kaze no Mori.
