I drank Tazake at lunchtime, but at night I drank Takachiyo! This one has a Sake meter of +19! It is dry and light! It is dry, light, and has a good sharpness! It has a classic feel. It has a nice umami or sweetness from the rice, probably due to the flat rice polishing. It is completely different from Hiragana, Takachiyo. Even the same brewer can make such different sake.

On New Year's Eve 2025, we drink Tenmei! Also known as Yukiten. For various reasons, Tenbi's nigori sake came to our house. At first I was going to drink it after the new year, but somehow I wanted to drink it tonight, so I opened the bottle! When the bottle was first opened, it did not have the same gaseous swish as the Mimurosugi from the day before yesterday. However, when you drink it, you can feel the pleasant gaseous sensation. The sweetness is not so strong but fruity. After sipping it for a while, you can feel the dry, alcoholic and full aroma spreading. This is delicious! It goes well with sashimi and tempura.

Today I drink Mimuro cedar! This is nigori sake from a wooden vat. When you open the bottle, it is shuwa shuwa. It is naturally stirred! When you put it in your mouth, wow! It's so tangy! The aroma is of melon, cucumber, or cucumber melon. The wooden barrels made of Yoshinosugi cedar give off a subtle aroma, which is a nice touch. The sweetness of rice spreads moderately. The sweetness is not so strong and goes well with eel bowl. It is delicious!

I'm drinking this tonight! Yome's birthday and Christmas are the same. But that doesn't mean it's anything special, so I'll be drinking sake by myself! Since it's Christmas, I'll have a Christmasy Sentori Yukidaruma! I've never had a regular snowball before. This is a collaboration with United Arrow (UA)! It's juicy. It's a green apple 🍏. The taste reminds me of sweet and sour youth. It also has a beautiful rice flavor that will make you a Sentori fan! Maybe it's because it's a bit weak at 13% alcohol, but I emptied the four-pack in no time! Merry Christmas 🎄🎁.

Finish with a crop! Apple aroma. Fresh, acidic and sharp. Nice sweetness from the rice. I drank Honoka version before, but this one is more acidic? Overall, it has a good balance. But it tastes like "Saku". It is good.

Tonight we drink at a tavern we frequent! 1st kind. Raw but fire-roasted raw version. Juicy and a hint of sweetness spreads in the mouth. Also has a unique raw taste. Went well with sashimi. The menu says it has a fizzy taste. But we didn't feel it because the bottle had been open for a little while. Polishing ratio Koji 50% Kakemai 55 Rice used Yamadanishiki Alcohol 15%. Sake degree +7 to +10

Drinking nigori sake again this evening! The taste is sweet and gassy, like ramune. After that, the mellow aroma of rice, typical of Miyazumi, moderately dances in the mouth! Less acidity and gassiness than Hirotogawa. This is delicious! I'm enjoying it! The color of the bottle and the label are also to my liking.

Tonight I will drink nigori sake! Today I went to 4 liquor stores with a friend and bought 6 bottles, mostly nigori type. Hirotogawa is a delicious sake that does not betray its taste! It has a gaseous taste. The sweetness and acidity spread quickly in the mouth, and there is a lingering aftertaste. It has a good balance. Rice: 100% Fukushima-produced Yumenokou rice Polishing ratio: 60 Alcohol: 15%.

Drinking sake from the Aoki Sake Brewery, which I visited in October. This is a local limited edition ginjo-shu. The alcohol content is slightly high at 18%. The rice used is 100% Koshitanrei. It is light, dry, and refreshing. It is easy to drink, with a hint of acidity. It is a classic Niigata-style sake. Aoki Sake Brewery is a building with an aura.

Sake I never thought I would drink while on a business trip to India! I have had Kubota's Senju and Manju, but this was my first time drinking 1920 Jun Daiginjo. It tastes so crisp and clean. Delicious! Sake is the best after all!

Drinking Chiba sake in the lounge at Narita. I forgot to check in here. It has a sour taste and a hint of gas. It has a refreshing taste. The rice polishing ratio is 80%, but it tastes beautiful and clean without any cloying taste. Tonight, before my business trip to India, I am drinking sake, which I am looking forward to! First, I drank the top clear liquid without mixing it, and found it to be moderately mellow! I bought this sake from Abe Sake Brewery at Nishikiya Sake Shop near Niigata Station during my trip to Niigata on November 3! They didn't sell the Hiragana "Abe" sake, but after listening to the owner's story and seeing my friend buying it, I bought it! First, I took a sip! Wow! How gorgeous! The label looks like an ordinary sake, but it is a modern sake. As one would expect from Abe Sake Brewery! The pineapple-like aroma spread gently and there was a slight gassy feeling. The aroma was like a little dance with a little bounce, and I thought it was the right choice to put it in a wine glass. When you put your nose in the glass, you can smell it well and enjoy it. After a little time, the aroma of rice is stronger and has a sake-like feel. Delicious! This is one of the "field specific projects" that Abe Sake Brewery is working on! The basic concept common to the series is as follows Rice: Kashiwazaki rice Sake mother: Kimoto brewing without additive yeast With these common conditions, the characteristics of each field are expressed in the taste. Other types include "Akada," "Kaminawa-shinden," and "Noda. I have seen Noda and Akada in "Sake-no-wa" posts, but I have not seen this one.

This is Junmai Daiginjo made in wooden vats! To be honest, I couldn't feel such a clear difference. I guess my tongue got stupid after drinking it first. It just had a nice sharpness and lightness with a slightly stronger sweetness.

Next, we will compare drinks from Imadaiji Shuzo, which also visited the brewery. First, the regular Junmai Daiginjo. It is rather old-fashioned, dry and light. After being crisp, it quickly cools down. It is delicious!

Next, it is aged in a snow chamber for three years. We were also able to visit the site where the entire tank is stored. It was amazing that a lot of snow remains in the snow chamber without melting even after a year! The taste is more mellow! I wondered if I could tell the difference. I was skeptical, but no, the aroma was better and the rice was a bit mellower. There was also a sweetness from the rice, further improving the balance! I then checked blind and could taste the difference.

Tonight I am drinking sake that I bought in Niigata with my father, mother, and second son! We bought these 300ml bottles to compare after our visit to the Hakkai Sake Brewery. We compared a Junmai Daiginjo and a Junmai Daiginjo that has also been stored in a snow cellar for three years. First, the regular Junmai Daiginjo. Steady deliciousness, light and dry. It is light and dry, with a crisp taste and a nice sharpness. The taste is also exceptional, perhaps because we toured the brewery.
