Yamagata Sake Bakuren Super Dry Ginjo This sake is produced by Kamenoi Shuzo, which brews Kudoki-Ue. Kudoki-Ue is a sweet-tasting sake made with Ogawa yeast, and Bakuren is a very dry sake with a Sake - +20 degrees. I usually drink only sweet sake, but I happened to find this one and bought it for the regular price of 2,420 yen. The aroma is gorgeous, as is typical of Ogawa yeast. In the mouth, the crisp umami of rice disappears without any bitterness or other unpleasant taste. It is a dry or rather refreshing sake. Speaking of dry sake made with Ogawa yeast, there is Kiri-Tsukuba dry sake, but I would like to compare them next time. Degree of liking 9/10
