SENKOKU Modern Nishiki Orikarami
SENKOKU became a new sake brewer this year. I was curious about it because I like the delicate and complex taste of the sake made from the traditional sake yeast. I was careful to open the bottle because it is an orikagari, but it did not blow out. The aroma is slightly gorgeous. When I put it in my mouth, I got a sour taste and then a bitter taste. What is it? I don't really feel the flavor of rice. Even though there is a shwashiness, it does not taste very good. It might be better as a stand-alone sake or with Western-style side dishes.
