★★★★ Happy New Year! The first new sake of the season is Atago no Matsu from Miyagi Prefecture. It is a new sake, but it doesn't have much gasiness. The aroma is mild and not too harsh. Not too sweet, not too spicy, just the ultimate food sake! However, to put it in a bad way, it is a bit half-baked, isn't it? It is not the type of sake that makes a statement, which is why I think it is a food wine.

It is a junmai ginjo that is not so sweet and is suitable for a mid-meal drink. It has a low acidity and a slight bitterness and miscellaneous tastes. It has a nice sharpness, so it goes surprisingly well with rice!

It is light and refreshing, perfect for a daily evening drink, and you may not get tired of drinking it. It was on sale at a local supermarket at a 30% discount, so I bought it on impulse! It's been a while since I had a bottle. It is delicious when served lukewarm with sushi.

It has a strong flavor and acidity that is unique to Yamahai. I paired it with stir-fried pork and eggplant with miso. I wonder if it would be good heated up?

It has acidity, so it tastes like something between sake and white wine. There is a slight bitterness in the aftertaste, but it is not too sweet, so it goes perfectly with food. Today we had it with our homemade taco rice.

There is no bitterness or miscellaneous tastes, so this is already sweet water. The lingering sweetness leaves a slight muscat-like taste in the mouth before it kicks in. Yum!
