★★★★ Usually Machida is special junmai. This is junmai ginjo. The aroma is fruity like Machida, but stronger than usual. Is it because of the name? A little bit bitter from a little bit of gas, just like usual Machida! Yum!

★★★★★ I tried to open the bottle without reading the warning carefully and the lid blew off. Fortunately only a small amount spilled, but I will be careful from now on. The name "Japanese Champagne" is not for nothing! This easy-to-drink carbonated 16 degrees Celsius is so good! The balance of sweet and bitter is also wonderful, and it goes down very easily. It is delicious.

★★★★? Tsuchida is a locally distributed brand of Tsuchida and they have started making additive-free sake this season. Speaking of Tsuchida, it is a "kamishige" sake. It tastes a little like Shaoxing sake when served cold. It tastes a little like Shaoxing sake when cold, but it is basically refreshing. When heated up, the umami flavor expands at once. It still has a Shaoxing sake feel to it. I would like to let it sit for a few days and enjoy the changes. By the way, I decided to drink a bottle because I wanted to evaluate the changes in the bottle!

★★★★ This is the first sake labeled dry I've had in a while. I usually prefer sweet sake, but sometimes it's good. The aroma is subdued. It has a good sharpness, but it doesn't cut off completely and there is a slight aftertaste.

★★★★★ I went to buy some heated Yamagata Masamune sake, but they were out of it. I was told that 50 degrees Celsius is the optimum temperature, so I had it warmed up to that temperature range. Yum! This is so good! The rice is soft and the nama-nuka is sweet, but the slight bitterness is a nice accent. The lebanilla goes so well with it!

★★★★★ Got this from the missus again this year as a birthday gift! No shortage of nigori in Machida! I can't get enough of the sweet bitterness of the shabashwa! This year it is less sweet and more dry. It goes well with sashimi.

There is no cloying taste, but I wonder what this assertion of bitterness is. I'm having it today with eho-maki (rice rolls). A slight correction. This is the one that tastes better when the temperature range is raised. As it gets to room temperature, the bitterness subsides and the sweetness increases! Is it possible to warm it up?

The sweetness is restrained and it is surprisingly dry, but when mixed with nigori, the rice flavor is soft and fluffy. We enjoyed it with oysters.

I think it was 14 degrees until last year, but this year it is 15 degrees. Still, there is almost no alcohol feeling and I can drink it with a gulp. By the way, last year it was shipped to liquor stores in three separate shipments, so I wonder if there will be that much again this year.
