Nichinichi Akitsu Yamadanishiki I had always been curious about this sake, which I found at a local liquor store. I looked it up and found out that it was brewed by HIDEHIKO MATSUMOTO Σ. The aroma is mild and a little gassy. It has a sour, sweet, and rich umami taste with a slightly bitter aftertaste. Not too spicy and not too sweet, just right! It was a delicious sake to enjoy on its own. I will enjoy it while savoring it slowly and carefully 😁.

Autumn Cherry Blossom 2023 At a corner liquor store that also had x-type 🥂. This one had a cuddly sweet and sour taste. The feeling changes a bit again when it is close to room temperature. The label said the flavor would change after 2 years of refrigeration, but I don't think I could wait until then if it were available at my house 🤣👍️

At a corner liquor store 🍶. This was my first time seeing Xtype 👀. It had sweetness and umami. It was like a white wine but with a soft acidity. I could drink it so smoothly...it was gone in no time.

Buy from your favorite liquor store 🍶. After opening the bottle, I poured it into a cup and started to drink it. It's strange that it's so shwashy! Even though the only ingredients are rice and rice malt 🤔... When you drink it, it tastes like lychee and makgeolli! But the aftertaste is dry and not sweet. Delicious! I opened the bottle today and there's only a few left early 😅. Today we had it with fresh peanuts boiled in salt and Camembert cheese 🥜. I checked and there seems to be a hotel in the forest where it is brewed, I am very curious about it!

Matsuo Pride Re:make Junmai Ginjo It seems to be a limited distribution sake of Kangiku in Chiba prefecture. I didn't read the warning about opening the bottle. I put it in the fridge horizontally. The cork blew out when I opened the bottle 🤣🤣. It has a firm sweetness and a gaseous acidity. It was juicier than the True White I drank before. It was juicier than the True White I had before. It was like green apple🍏 or rumney! Delicious😋.

Yamamoto Akita Royal Straight Flush Purchased at my favorite liquor store recently. When I first saw it, I thought "Hmmm, I didn't know they had such a thing" and passed it by. But after I left the store, I was still curious about it, so I went back to the store lol. It is an interesting sake that combines 5 different yeasts and 5 different types of Akita sake rice! Five kinds of yeast and five kinds of Akita sake rice are combined to make this interesting sake! I imagined it would have a more bizarre taste, but it was surprisingly calm and rather dry, I imagined it to taste more eccentric, but it is surprisingly calm and rather dry. Great on its own or with a meal! The taste of the five different yeasts and rice used in the brewing process I couldn't tell as an amateur. It was a delicious sake with a good umami flavor and a nice sharpness 🙆🙆. It might be good to give as a gift.

Morishima Miyamanishiki Junmai Ginjo Bottle warmed and fired Purchased as a souvenir from back home The last time I drank the red label one, it was delicious. So I bought a different one this time. The aroma is floral at first, but the aftertaste is clean and refreshing. The aftertaste is refreshing. It was a very beautiful sake. It went well with sashimi. The shrimp crackers were a personal favorite. The shrimp crackers were especially good with the strong taste of prawns. Especially the ones with a strong shrimp flavor.

From the brewer's website "For those days when you want to eat with gusto, this is a dry cup that won't be overpowered by dishes made with oil. The light and smart aftertaste goes well with meat dishes like roast beef, hapao chai, deep-fried tofu, etc." Even though it is dry, it is quite easy to drink! The rice flavor is soft in the mouth and the aftertaste is sharp and clean. I thought it would go well with meat. I paired it with sausage that I had at home. I paired it with a sausage I had at home, but it would go well with more hearty meats like spare ribs or stewed cubes of meat! Fat! I felt that this sake goes well with oil, so I paired it with fried tofu. I agree with the introduction by the brewer that it goes well with deep-fried tofu 😌. This is a great sake I found 😋.

I never had a chance to drink while I was in Aichi. Kou no Tsukasa" in Okazaki City I was told that it is made with super soft water, It tastes soft and tasteless! It was a delicious sake with a sweet taste.

Tasake Junmai Ginjo 100% Comet At a local liquor store The bright red label caught my attention and I bought it. Tasake has a refreshing sweetness of green apple🍏 type. I had an impression that Tasake has a refreshing sweetness like green apple🍏, but this is a little different? Ohmine 3grain Summer's coming Purchased at a local liquor store 🍶. The label design is cute with an illustration by Misaki Tanaka ^_^. A refreshing sweet and sour sake with a grapefruit-like citrus flavor! The low alcohol content makes it easy to drink in this hot season. ☺️ It is best to drink it well chilled or on the rocks.

ABE Our Sake vol.18 Kashitori shochu distilled in a distillation machine is used to make this "Hashira shochu-brewed" Kijoshu. A "Hashira Shochu-brewed" Kijo-zake (noble sake) It has a sour, sweet and sour taste! It is a pleasant enough sake to drink alone 🍶. It is a taste that I want to drink it cold in the hot season from now on. From the QR code on the label I was able to read the story of its creator from the QR code on the label. I could understand that it was made with a lot of time and effort. I can understand why the price is so high.
