Purchased at Daimine Shuzo. Sweet and grassy aroma. When you drink it, you first feel the sweetness quite firmly. The sweetness is more like fruit than rice. It has a strong umami flavor, but it also has acidity, and the aftertaste is not that heavy as it gets sharp in the latter half of the bottle. The sweetness stands out so much that it would be a bit hard to continue drinking sake alone. The brewery is modern and stylish. The café space was filled with many people and you could sense the owner's sense of style. The sake lees ice cream is superb!

The sweetness spreads in the mouth at the moment of drinking. After the aroma of apple-like fruit, moderate acidity, and the firm umami of the rice, it quickly finishes with a crisp finish, as is typical of Nabeshima. It was a really delicious sake, soft without corners, but with a sharpness at the end.

I purchased this at a brewery opening. The soft sweetness of the rice and the aroma spread slowly. It is a daiginjo, but you can clearly taste the deep umami that only unfiltered nama sake can provide. The taste was gentle yet robust until the end. It was extremely delicious.

This limited-edition draft sake was purchased at a sake brewery tourism in Kashima. Nokomi is my favorite sake that made me fall in love with sake. ARATA is in its second year, and I felt a considerable sweetness due to the sake's -10°C temperature. There is not much aroma, but there is a lot of acidity, so it is a very characteristic sake with a strong impact. The sweetness and acidity came with a bang, and the aftertaste was long, so it was hard to keep going.

At a sake brewery in Sakaiminato City, Tottori Prefecture, the birthplace of Shigeru Mizuki, The label of Konaki Jijiji is cute. As the description says, it is super dry, with a crisp taste and no aroma or sweetness. However, it is a pure rice sake with a strong umami of rice, so it does not give the impression of being light, but it does have a sharp acidity. It also has a tingling acidity, giving it the image of old-fashioned sake. I still don't know how to classify it. It is a delicious sake when paired with a meal.

The moment I drank it, I sensed a flavor unlike any other sake. The aroma of ripe fruit, which to me was like grapefruit, spread out with a rich aroma and sweetness. It had a soft acidity, but also a firm umami flavor, without a single bit of cloying taste until the aftertaste. It was a truly delicious and memorable sake!

This was my first time to try Hana-no-Rusu's sake, and I tasted two kinds at the brewery. The one we purchased was a limited-edition, unblended sake from the brewery. Both of them had the same sourness from the front, and from the aroma to the lingering taste, I couldn't get rid of it and thought it was stinky. I guess there are different tastes, but for me it was not a delicious sake.

The soft aroma and the first mouthful of sweetness and umami are well felt and have the thickness that can only be found in a sake, but the acidity is strong and the overall impression is quite refreshing. A drink at night on a day when we went out after midnight to watch the Yamakasa and Oiyama festival. Fruity sweet aroma Surprisingly, it has a refreshing taste, sweet but not heavy, so you can drink it light and refreshingly. The second half is quite crisp and goes well with a meal. I was pleasantly surprised to find the acidity of the Yamahai brewing process quite strong. The moment I drank it, I thought it had a strong acidity. The sweetness and umami of this unfiltered, unpasteurized sake are also strong, giving it a powerful and cohesive impression. I like to drink sake with strong acidity by heating it up, but I enjoyed this one cold until the end.

Comparison of Sake Rice: Saito no Shizuku, Sake Mirai and Orikarami The moment you drink it, you'll roar that this is delicious. I really think it is a very complete sake. It is gorgeous, free of bitterness and other unpleasant tastes, and has no corners, so it is easy to drink, but the sweetness and deliciousness of the sake can be fully enjoyed! It is like a modern sake! All of them were delicious, but personally, I enjoyed the Saito no Shizuku because it was so refreshing!

Shiraito Shuzo brewery's brewery opening, got a limited edition of Tanaka Rokugo raw sake. The sweet aroma of the rice stands out. The mouthfeel is also very sweet, but the rice flavor is subdued and quite light, like water. The aftertaste is a little alu-like. It needs to be refrigerated, but if you drink it cold, it is too light and not enough, so if you drink it in a glass at room temperature, you can feel some of the flavor.
