I was pleasantly surprised to find the acidity of the Yamahai brewing process quite strong. The moment I drank it, I thought it had a strong acidity. The sweetness and umami of this unfiltered, unpasteurized sake are also strong, giving it a powerful and cohesive impression. I like to drink sake with strong acidity by heating it up, but I enjoyed this one cold until the end.
