With white malted rice and No. 7 yeast, which is often used mainly for shochu. Refreshing acidity and fruitiness. It is a limited edition spring sake, brewed once a year with Omachi instead of the usual Yamadanishiki. It has a clean, yet deep and rich flavor with a sharp finish. It is clear, yet powerful. ◎◎

It has a firm sweetness and umami. It has a clean, mellow flavor with no cloying taste at all. It has a strong presence on its own and seems to be very well received. (It was a mistake to pair it with fatty sashimi. (It would be a mistake to pair it with fatty sashimi, or with citrusy grilled dishes. Or perhaps a dessert wine?) It is interesting to think about the best TPO.

Yamagata Prefecture, 100% Izuwasanzu, 62% polished rice Yeast is a strain isolated from Tokyo University of Agriculture Beautiful and clear mouthfeel. The first impact is a slightly blue impression.
