It's been quite a while since we've had Atago no Matsu, a Junmai Daiginjo made from Hakutsuru Nishiki.
This is a fine shokuchu sake. It is crisp and spicy, and has a good sharpness.
It has a sweet and sour taste, and the aroma is elegant.
It goes well with any kind of food and can be enjoyed by itself. I felt that it is a sake with a high degree of perfection.
