The first one since New Year's Eve is Junmai Ginjo made with Banshu Yamadanishiki. It has a fruity aroma with a strong hint of peach, perhaps because it has been heated once. It is impressive. When you sip it, you think it's sweet and umami, but soon after, it becomes crisp and spicy. The taste is strong but crisp. It's good to drink by itself, and it's also good as a food sake. After all, Collage is good.... For the side dish, I had some scallops that looked good, so I made a Japanese style carpaccio and served it with Hokkaido's sea urchin.
