Tonight, we're having an unseasonal Hanami Ro-Man.
I thought it would be good as a summer sake because of its low alcohol content, but I was right. It has a refreshing mouthfeel, but it also has a strong umami and richness.
The aftertaste is long, with sweetness and bitterness, and then the acidity brings it all together. It does not have a good sharpness, but the acidity makes it refreshing.
Pair it with bonito, which reminds you of the arrival of autumn.
