This is my new favorite restaurant. Tonight is the first time for me to try the raw one that I learned from a certain person.
It was even better than my high expectations.
The aroma is modest and elegant melon. However, when you put it in your mouth, you can taste the voluminous flavor, sweetness, and sourness peculiar to the raw. And it is juicy like biting a fruit with a lot of water.
For such a wonderful sake, simply pair it with raw shirasu.
