This is the Shichida Junmai Seventy-fifty Hiyaoroshi All Aisan from Tenzan Shuzo. The ginjo aroma is a little banana. It's a bit banana-like. The acidity is also strong. It is a little dry. Chilled sake is good, but it might look good warmed up too. #Tenzan Shuzo #Shichida #Japanese Sake #Saga

This is Hakkaiyama, a refined sake from Hakkai Jozo, Minami Uonuma City, Niigata Prefecture. I think the breweries with the best Honjozo are the ones with the best skills, but this Hakkisan is delicious. Many sake breweries make it easy to drink with a crisp, crisp flavor, but this Hakkisan has a rich flavor and a mellow texture.

KIDO-KID-Junmai Ginjo-Shu Hiyaoroshi from Heiwa Shuzo, Kainan City, Wakayama Prefecture. The aroma in the mouth is very strong. If I were to compare it to a woman, it would be a beautiful woman with clear eyes and nose. However, her personality is calm and gentle, just like a hiyaoroshi. She is very popular.

Today's sake is a can of Funaguchi Kikusui Ichiboribori Honjozo-honjozo unpasteurized sake made by Kikusui Shuzo in Shibata City, Niigata Prefecture, compared to the bottle we opened last time. The bottle was brewed in June this year and the can was brewed in January. The difference is very small. The bottle was opened a few days ago, so it has a little bit of acidity. It's just a little bit. It's just a little bit lighter. The can is 6 months old, so it has not been exposed to air, so the flavor is stronger and richer. The difference is minute though. It's interesting to compare drinking the same brand 🤣

Even though I'm a local, I've been licking Fukuoka's booze. I drank a yearling at a sake bar in Fukuoka that specializes in sake, and it was humbling. The sweetness, the flavour of the flavour, it hit me right in the middle of my love of sake!

Today's sake is the Inazato Junmai Ginjo Hoshi from Isokura Shuzo, Kasama City, Ibaraki Prefecture. At the first sip, what? Water? Soft. Gentle ginjo aroma. Hmm, if I had to choose, I'd say watermelon? Slightly sweet and tasty rice. This is a food poisoning drink.

Just like the one in the can, it has an aroma of cocoa and a rich flavor. Despite being 19 degrees, it's easy to drink and the taste is almost the same every year. Delicious.

Today's sake is a Kamishin Tokubetsu Junmai Nagisa no Uta from Kamishin Shuzo, Asakuchi City, Okayama Prefecture. It is refreshing. The aroma is almost imperceptible. Is the brewing water soft? Mellow and easy to drink. It doesn't have a flashy personality and doesn't interfere with the food. You can drink it with peace of mind.

This is a Raku-no-Se Sanpai Junmai unfiltered filtration from Marui Godo Kaisha, Konan City, Aichi Prefecture. It has a faint aroma. Bold and delicious, like mountain waste. It's rich! The flavor of the rice stays on your tongue. However, it is not sluggish. It is not sluggish. A normal sake pervert like me would like this taste.

The ginjo aroma is mature. The label says it smells like lafrance, but the flavor is certainly close to lafrance, with a soft sweetness. Tsuyahime is the local rice of Yamagata. Its flavor is interesting!

This is Watamatamatan Yamadanishiki from Kurihara City, Miyagi Prefecture. Summer sake! The ginjo aroma is mild, with a little sourness rather than umami. It has a refreshing taste. I want to chill it and guzzle it. The label has a summer pattern, a yellow flower garden and a Jack Russell terrier.

This is a special junmai sake Koda from Hakurei Shuzo, Miyazu City, Kyoto. Is it the brewing water? It has a standard taste, but it's light. I was expecting a woman's sake because of Kyoto, but it is a little dry. It is a sake that complements the sashimi.

Hanayuki Junmai Ginjo Shochu (unpasteurized sake) made by Kawazu Shuzo, Oguni Town, Aso County, Kumamoto Prefecture. This is..... It's sweet! Mellow. A little off the sugar road, but it's rich, sweet and delicious. The ginjo aroma is not glamorous, but calm. There is almost no sourness. It will be interesting to see how sweet and sour it gets after that.
