Kido was recommended to me at a standing bar I used to frequent, and I've been piling it up as a challenge ever since. It has a fresh pineapple aroma and sweet and sour taste. It gave us the impression of a fresh and energetic drink. It was delicious because of its reputation.

The rice ratio is 60%, and the sweet aroma of ginjo-shu is fluffy. It's mild in the mouth, and there's no sourness or bitterness to be found at all. It's the kind of taste I love. The theme of this drink is "healing food juggernaut," but it works well on its own.

Is the scent alcoholic and mediocre? But then I took a sip and was surprised! Gorgeous flavors, sharp acidity, fullness and roundness come together in a bundle. I've never tasted such a multilayered flavor before. The aftertaste was impressive, with a sweetness like a persimmon and a sourness that lingered indefinitely.

It is called "Ogose Bairin". The aroma is really typical of Japanese sake. I thought it was sweet on the palate, but soon afterwards a pungent and bitter taste comes in. Even after drinking it down, a slight numbness remains on the tongue. It goes well with fatty sashimi.

This is the sake that made me fall in love with Ponshu-numa. When you open the bottle, you can feel the posh! And a lively sound. In my mouth, I'm like, "Did I ever feel so fizzy? I was surprised. The palate is like a sparkling wine, with a rice flavor and a hint of astringency coming in later. The gradation of flavors is very interesting.
