The second drink at Hikaru-kun's restaurant Fruity but mild aroma Sourness is so-so. The aftertaste is soft, gentle and mild. Hikaru, however, says it has a dry aftertaste. It is interesting that different people feel differently. The sashimi of the day was an assortment of matsukawa flounder and hoshigarai with tuna! The tuna was a perfect combination of plump and chewy, and the tuna was excellent, too!

Light, juicy and refreshing Modern Yamahai as the name implies As the temperature rises, it has a sense of body and is good as a food sake. Serve with fried shishamo with a squeeze of lemon.

One of two bottles returned from last year's crowd funding. Opened as it's been almost a year now. It seems to be a test brew, but the label only says "Daiginjo" and nothing else. Royal ginjo aroma Rich and elegant sweetness like wasanbon No bitterness, astringency, or other unpleasant tastes. A delicious sake with no complaints about the quality of the sake on display. It looks like Yamadanishiki 1801, but it must have different specs if it is a test brew. Since it's Raifuku, I wonder if it's a flower yeast? I'd like to hear about it if I get a chance. Another bottle is also very promising!

This term, Michiko and Masaaki will continue to work on Yui Yui at the Sanzen Sakura Brewery in Hokkaido and the Raifuku Brewery in Ibaraki, respectively. At a SAKE MEETING held in Toride, Masaaki-san gave me a bottle of Masao (Masaaki's Oumachi). He said it was lighter this year, but it tasted exactly like Yui Yui. I bought a bottle of Michio (Michiko's Omachi), which I could not drink that day, and drank it. Mmmm, it was delicious! Soft, mellow, sweet and acidic with a strawberry flavor that is typical of Yui. I heard that this season's Omachi does not melt, but the sweetness and umami are well expressed. It has more flavor than last year and is more like Yui. As expected of Michiko! She must have changed the water and yeast in Hokkaido, which she is not accustomed to, but it still tastes like Yui! Michiko must have brought out the taste of Yui. I was so happy that I drank more and more.
