A series of stars shining in the night sky - the first star "Vesper" ⭐️ This is the first low-alcohol sake from the Sairai brand 🍶. Fresh muscat-like fruit aroma, smooth texture on the palate, light sweetness and juiciness in the first half, sourness and bitterness in the second half, and a well-balanced clean cut😍.

It's a new arrival and there are only 2 bottles left 😊. The rice used is Miyamanishiki from Nagano Prefecture🍶. It has a mild heady aroma and a sharp, dry, quality taste that harmonizes the umami and acidity of the rice.

It has a moderate aroma of rice with a hint of fruitiness. In the mouth, a full flavor and rounded, soft acidity mingle together, and the slightly light, spicy, dry aftertaste keeps you coming back for more! It seems to go well with dishes with strong flavors 😁.

I usually buy it at the liquor store or local supermarket, but I ordered it online for the first time in a while 😊. It has a slight citrus aroma, freshness and slight carbonation (🫧) that can only be found in nama sake, a good balance of acidity, umami, and sweetness, and a soft dry taste that cuts nicely with bitterness in the second half 😋.

Chose it because of the cool bottle design: ✌️ It is decorated with the pattern of "Isekatagami", a traditional craft of Suzuka City 😁. When you drink it, you can feel fresh and fine gas, fresh and sharp acidity and umami, rich flavor and full-bodied impression 🍶. After opening the bottle, I hear you can taste the rich flavor when the gassiness fades, but I think I'll drink it right away before that happens 🥰.

Dry food sake brewed at a small 200-year-old brewery in Shobara, northern part of the prefecture 🍶. It has a mild, light aroma, a full-bodied flavor and a crisp dryness when you drink it, a good thirst-quenching taste, and a clean aftertaste that doesn't interfere with food 😁. It's a great cosmetic sake, but I like this one a lot 😋.

100% "Kitashizuku," the pride of Hokkaido's three sake rice brothers, is used 🌾. Fresh fruity aroma of 🍏, as expected of a daiginjo when you drink it, fruity sweetness of 🍏, fresh and clear taste, and a bitter acidity on the back palate with a clean and short aftertaste, a bottle that can be enjoyed on its own😋. The label and bottle design match this modern flavor!

After the Mimuro Sugi the other day, I got the "Nanadoro" version of Kaze no Mori that was left unsold at another liquor store 😆. 657" number 🍶 brewed with 65% polished rice and No.7 yeast. Be careful opening this one, it's so vibrant the lid almost flew off... 😳. It has a sweet lime-like aroma, a pleasantly strong gaseous sensation when you drink it, a fruity aroma and rich sweetness, and a refreshing aftertaste accented by the acidity and bitterness that follows! I am sure that Kaze no Mori is the best 😋.

The name "Kamerei" is derived from the fact that people live as long as turtles by drinking sake, the "best of all medicines" 🍶. In Hiroshima, Kamerei is a dry sake 😁. The aroma is subtle, but when you drink it, it has a refreshing flavor and a clean, light taste, especially good with sashimi! At noon, we went to see the GW Flower Festival, which started today in Hiroshima. The weather was beautiful, the parade was spectacular, and the place was bustling with people 😄.

It is a challenging sake made with prime numbers (protos), such as a rice polishing ratio of 71% and a malt age of 31 days. The 9th generation Touji, a math lover, brewed this sake with a focus on "prime numbers" in all the specifications. The label also has a unique feel to it 😊. The nose has a fruity sweetness, and when you drink it, it has a lively freshness characteristic of nama-shu, a gentle sweetness and acidity that mingle nicely, and a light, low-alcoholic taste that cuts through quickly. A cup of sake that can be enjoyed on its own.

It has a white wine-like aroma, and although it is 80% polished rice, it has a refreshing acidity and umami flavor with no cloying taste, and is rather dry 🤔. It is well-balanced, so it seems to go well with a variety of Japanese and Western dishes, tonight we had it with hand rolls 😁.

I was looking forward to this Mimuro-sugi, brewed with "Nanaro" rice, newly developed by Nara Prefecture over a period of more than 10 years for sake brewing. It has a subtle citrus aroma, and when you drink it, the umami and sweetness spread in your mouth, and the petit gas feeling combined with the acidity unique to Bodumoto leaves a lingering aftertaste, while the wine wears off lightly 🍶. Light and light with low alcohol content, it has a high degree of perfection typical of Mimuro Sugi 😋.

Tokyo's sake breweries series in stylish 180 mm bottle cans. Purchased at Tokyo Station during a business trip to Tokyo. It's not "tamanjiman" but "tama-jiman" 😁. It is characterized by its mellow flavor, gentle sweetness, and smooth, easy drinking texture 😋. It comes with a sake cup, so it's easy to have a cup on the bullet train on the way home from a business trip!

On a business trip in Tokyo. With Gansu, a local dish 😊. Gentle sweetness, umami, and I think the lingering aftertaste was a bit on the dry side. I've had quite a bit to drink, so my taste buds are a bit suspect 😝.

The "Tagaji" series 🍶 which we felt was the best among the various types of wine we drank last year. Fresh fruity aroma, juicy flavor and a light, slightly fizzy balance are very pleasant on the tongue! 😋 The crisp acidity tightens up the flavor and gives it a great finish, making it easy to drink on its own 😍. It's still delicious!

Masaaki Sapporo, thank you... Tagaji in Okayama seems to be a small brewery, so we only see one store in Hiroshima. I hope to explore more breweries across the country in the future 😁.

This is the first Ganki sake that is not watered down, not heated, not filtered, and bottled as it is after being pressed 😆. The aroma is calm, the taste of rice is mellow and light, and it is easy to drink and not get tired of drinking it. The citrusy acidity and spiciness in the back of the mouth accentuate the sharpness of the sake!

I ordered it at a welcome party at work 🍻 after ordering a variety of drinks, so I was drunk and couldn't really smell it 😆. When you drink it, you can feel the sweetness and umami, no dryness. The soft sweetness went very well with the saikyo yaki 😊.

Miino Kotobuki is famous for being named after a character in a popular basketball manga 😊. Batonage" is a term used in winemaking to mean stirring the lees with a baton during the "sur lie" process, in which the lees are kept in contact with the wine while it is still on the table. It has a refreshing fruity sweetness on the nose, and when you drink it, the cool white wine-like acidity matches the umami of the Yamadanishiki rice, with a clear texture and a slightly dry, clean finish. This is a sake that is easy to pair with Western food!

The cherry petals and kingfisher on the label, as well as the slightly cloudy appearance, give this seasonal bottle a springtime feel 🍶. The fresh aroma, the youthful rice flavor and soft sweetness on the palate, the bitter acidity on the finish, and the dryness of the dryness are all in full bloom 😋I like the gradation of flavors!
