Kame no Umi Junmai Ginjo Hosoyuki ★★★★ Entry: Rice aroma, smooth. In the mouth: Gorgeous, sweet and delicious, with a quiet acidity. Aftertaste: Aroma of rice through the nose, gentle sweetness and umami. Hatsukame no Umi! It is gorgeous and beautiful, but you can feel the rice firmly. The more you taste it, the more the flavor increases. It goes well with dashi (soup stock) which has a clear taste of rice.

Senkou Organic Naturals 2020 W:kijoushu ★★★★☆(★★★★★) In: fruity muscat? It is very smooth. Aftertaste: Gentle sweetness and umami that envelops the mouth, with a hint of sourness and bitterness. Aftertaste: The sweetness and sweetness disappear slowly, the bitterness comes out slowly, and the aroma goes away from the mouth. Sweet! Dark! Umami! The organic naturals themselves were peculiar and a little delicate, but as soon as it became a noble sake, what a sweet and delicious bomb! It's a dessert sake, like an ice wine. Hanayoi Junmai Ginjo Unfiltered Raw Sake Yamadanishiki ★★★★ Entry: Pineapple aroma, smooth and silky. Hint: Sweetness, thin umami and sourness, a hint of gas. Aftertaste: Pineapple scent comes out from the nose and leaves a long bitter taste on the tongue. The first flowery day! It's so pineapple! It's good, but the bitterness and aftertaste is longer than I imagined. I'd rather drink it with appetizers or sweets than by itself. The next day, the bitterness disappears quickly and it's replaced by sweetness! Delicious! Three days later, the sweet aroma has become stronger. A mildly sweet sake. After 5 days, the sourness has become a little stronger, and I'd like to finish drinking it by this time. By the way, I paired it with strawberries, and it was outstanding!

Tenbi Junmai Ginjo Nama ★★★★☆ Entry: Slightly fruity, smooth and slightly tart. In the mouth, there is an elegant sweetness and umami with a firm acidity. Aftertaste: The muscat scent leaves in a fluffy way, and it finishes with sourness and bitterness. Nice to meet you, Tenbi. Yes! Elegant and polite muscat flavor is good! The lingering finish is perfect for sipping. It goes well with meals. I've heard that it will settle down and change its flavor over the next few days, so let's look forward to that too. The next day, the gas has been released, but it's still very lively. Two days later, it's all settled down, and it's become gloriously sweet! It's delicious!

I get the same fruity aroma and gorgeous gassy feeling as the Snow Crescent, but I get the impression that it's much calmer overall. It has a sense of security, like it's being held in place. It feels confident! As the days go by, the fruity notes get stronger and mellower, which is also delicious. Personally, I prefer the first two days!

Akatake SNOW EXTRA ★★★★ Entry: Melon aroma, comes in smoothly. Aftertaste: The flavor, sweetness, and sourness pop along with the stimulating tingling gas. Aftertaste: The gas still tickles the throat and the sake aroma escapes from the nose. The gas that pops is fun! The gas is not strong. When I paired it with a fairly oily meat dish, it cut through the fat and was a good match... It's also low in alcohol, so pairing it with something similar to beer is perfect. It's my favorite of the Akabuki's so far!

Taka Special Junmai Nao-Kumi 60 Hatsu-Shibori Shinnamesai ★★☆☆ Entry: Fruity and sake aroma, smooth. Aftertaste: Beautiful umami and acidity with a hint of bitterness. There are many beautiful water-like sake, but this is a completely different kind of water-like sake! As the temperature rises, the lingering flavor spreads, but it's still watery. SAKIYAMI Junmai Ginjo Direct Pumping Arabashiri ★★★★ Entry: Fruity aroma, smooth. In the mouth: Tingling gas and sourness, umami in the back, not much sweetness. Aftertaste: The sake aroma comes out in a fluffy way, and then the fruity aroma comes out afterwards. This is my first Sakyami. Very sharp! And yet the fruity feeling is new to me. The crispness after drinking makes it great with meat dishes or white fish... I'm not a big fan of dry sake, but this one goes well with it! Hououmida - Fully ripened peach ★★★★ Entry: Very peachy and dense. In the mouth: It is very sweet with a lot of flesh. You can feel the alcohol from the back of the tongue to the top of the throat. Aftertaste: The sweet aftertaste disappears easily with a hint of alcohol. This is not a sake, but it has Hououmida in it, so I tried it! Super ripe! From the smell to the taste, it's like you're sucking a whole peach into your mouth... The alcohol you feel in your throat is different from juice, and it cuts through the sweet aftertaste.

Akatake Junmai Ginjo NEWBORN ★★☆☆ Entry: Thin melon aroma, smooth. Hint: Light gas, well balanced sweetness, umami and sourness. Aftertaste: Exiting aroma and a hint of bitterness. It is refreshing and good as a sake for eating. The quality of the sake is similar to Junmai Hi-ire and Akatake is very stable. As you continue to drink it, the bitterness will gradually build up in your throat, so you will want to drink it as an accent to meals.

Hououmita Hatsu Shibori Junmai Ginjo ★★★★ Entry: Sweet grapey aroma, smooth and clean. In the mouth: Beautiful sweetness and firm rice flavor, no gas and no acidity. Aftertaste: A strong umami taste that spreads from the back of the tongue to the throat with a hint of bitterness. The impression is more beautiful and easy to drink than the last time I drank it. The image of Hououmita is clean and the umami comes with a bang. It is delicious and I recommend it, but I personally prefer it with a little less umami.

Aftertaste: The sweetness and umami spread quickly, and the acidity breaks off quickly. It is a sweet and delicious sake that hits the tongue comfortably and the throat mellowly! It is said that it should be chilled and drunk in a wine glass, and it is delicious to sip it quickly. Yokoyama has a variety of different yeasts, so I'm curious to see how the other ones turn out!

Comparison of Tojo and Yoshikawa regions Tojo has a bit more citrusy freshness, while Yoshikawa has a gorgeous sweetness! When paired with a meal, the Tojo is more delicious because it doesn't interfere with the meal! If you want to drink it by itself, drink Yoshikawa, but if you want to drink it with food, drink Tojo! 👍
