This sake was given to me by an acquaintance when I went back to my parents' house. This is the first time I have had it. The aroma was gorgeous, as is typical of daiginjos, with a pineapple aroma. It was juicy and rich, with just the right amount of sweetness, bitterness, and acidity. Thank you very much for the sake.

Happy New Year! I hope to continue posting this year, enjoying your posts and thankful for the opportunity to enjoy healthy drinking myself! I have had 寫楽 a few times when drinking out, but this is my first time drinking it at home. It is a bit cloudy with a hint of ogoromi. The aroma is fruity and sweet, with a strong aroma of isoamyl acetate, like banana-flavored sweets. The taste is mainly sweet, and it is a very easy-drinking sake with a sweet flavor. Thank you for the treat 😄.

I was looking at your post and thought it was probably my favorite sake. I finally found it 🤗. It has a juicy aroma of strawberries, pineapple, and apples. The taste is sweet, bitter, and slightly umami, but it also has acidity and a clean aftertaste. It was just as I imagined it would be.

Fudo was recommended to me by my favorite liquor store. It was my first time to try it. There were several types of Fudo, but I bought the Omachi because of my personal preference. It is also known as Fudo Purple. The label has a strong impact. The aroma is fruity and juicy like strawberries, melon, and pears, and the creamy sweet aroma is gorgeous. The flavor is rich and full, with a sweetness, umami, and bitterness that is typical of Omachi, and the acidity is moderate. It was a delicious sake that was very easy to drink...a treat 😋.

I do not know the details of the flattened rice polishing or the micro-bubble rice washing method, but I was expecting that this sake must have been brewed by carefully pre-treating the rice used to make it. The aroma is fruity, like ripe bananas and green melon, with a hint of citrus. It also has a tangy, gaseous taste. The sweetness is moderate and the acidity and bitterness are a bit strong, but due to the low alcohol content, it is light and has a clean aftertaste. As expected, it was a very tasty sake with no cloying taste. Thank you very much for the sake.

I bought this for my own souvenirs from Nakano Shuzo and drank it at home. The Junmai Ginjo had a slightly more floral aroma than the Junmai Sake, with a fruity aroma like strawberry syrup or red meat melon, and a vanilla-like sweet aroma. The taste was well-balanced with sweetness, beautiful acidity, and a good amount of bitterness in the accent. The overall impression was of a strong flavor. It was also very tasty. On my first visit to Oita, I took a short trip to visit Nakano Sake Brewery in Kitsuki City (I forgot to take a picture of the brewery 😭). (I forgot to take a picture of the brewery...😭) Even though our timing was just in time with a group of Westerners, they were very courteous and even allowed us to taste the sake. I bought a small bottle of Chiebito, which is hard to find outside of the local area, for myself, as a souvenir, and for drinking with my evening drink during my stay in Oita. The aroma was subtle, with a ripe, fruity aroma like red melon or mango, not too sweet or acidic, with just the right amount of bitterness and umami. Thank you for the sake.

After the special junmai, we continued with the junmai ginjo. It had a melon-like slightly fruity aroma and a traditional sake alcohol taste. The mouthfeel was sweeter than the special junmai, with umami and a slight bitterness. It was a treat!

This was my first visit to Oita. First, we stopped in Hita to enjoy freshly brewed beer at the Sapporo Beer Hita factory, and then visited the brewery, Kuncho Sake Brewery. The brewery has a museum where old sake brewing tools are on display and can be viewed at your leisure. We purchased two small bottles to drink at the inn, and after a relaxing evening soak in the hot spring, we opened the special junmai first. It was dry and refreshing, with a slight yogurt-like fermentation and alcohol taste. It also had the feel of traditional sake. It was a treat 😄.

We visited a sake brewery in Ome for a tour. The brewery has a long history, having been founded in the Genroku period (1688-1704), the time when the Ako Ronin were killed in battle. The tour of the brewery is mainly focused on the storage warehouse, but the building has a nice atmosphere with mud walls. Across from the brewery is a corner where visitors can sample sake for a fee, and at the time of our visit there were about 13 different kinds available. I had three kinds of sake: Houou, Hiyoroshi, and Souten Nama-zake, and I bought a small bottle of Souten Nama-zake, which I liked, at the liquor store next to the brewery. It had a melon and watermelon-like aroma and alcohol taste, with sweetness, bitterness, and umami a little stronger, and the acidity trailing behind. It had a fruity vibe due to the sake's freshness, but overall it also had the flavor of traditional sake. It was a treat 😊.

It is a nigori sake with an alcohol content of 6 degrees. They use white koji that produces a lot of citric acid for the koji mold, and they also put in three times the usual amount of koji mold. In addition to the lactic acid bacteria drink, yogurt, and citrus-like aroma, there is also a strong aroma of rice. It has a creamy, milky mouthfeel with a very strong acidity and sweetness. It felt like a doburoku with a stronger acidity. It is more like a gulp than a swig. The creamy flavor would certainly go well with spicy food. Thank you very much for the meal 😊.

I had the impression that I had seen many comments on your post about how delicious it was, but I had not been able to find it. The other day, I finally found it at a liquor store introduced to me by a colleague who said they had a large selection. There were nigori and junmai (pure rice) varieties, but I bought the junmai ginjo-shu because I was attracted by a comment on the store's pop-up that I couldn't quite understand: "Junmai ginjo-shu has a beautiful sweetness produced by koji, which gives it a glamorous and sexy flavor" 😅. The aroma is fruity and sweet like melon or vanilla, with notes of rice, graininess, and a yogurt-like fermentation. The sweetness was mild and refreshing, the acidity was moderate, the umami was a bit strong and the overall taste was powerful. It was a very tasty sake with a complex aroma and taste with a good balance 👍Thanks for the drink 😋.

This is the first time I have had Nakashimaya's sake. This sake is brewed by a sake brewery with a history of over 200 years. According to the sake brewer, they are shifting from traditional sake to a somewhat modern flavor. The aroma is sweet and fruity like ripe red melon, grapes, or honey apple, but not too strong, and the overall flavor is rich and mellow, with a good amount of sweetness, beautiful acidity, umami, and bitterness. It was well-balanced, juicy, and quite my favorite sake. The sake rice seems to be Omachi, and I realized once again that I prefer sake brewed with Omachi 😁 It has a strong flavor, so it would go well with strong flavored dishes. Thank you very much!

This sake is made by Yoshida Sake Brewery, which brews Tedorigawa. I remember Tetorigawa as having a sweet, juicy flavor with a refreshing aftertaste. By the way, the "u" in the name means "kind" and "you" in the name of the sake. The sake we had this time had a moderate aroma of apple, grape, fruity, and a little bit of white wine, a sweet mouthfeel, a little bit of acidity, a hint of bitterness, and a slight effervescence, and because of its low alcohol content, I thought it would be an easy drink for those who do not usually drink sake. After a day of drinking, the fizziness disappeared and the taste became more subdued. As the name suggests, it has a gentle taste, and I personally liked it. Thank you for the sake.

I found Ding, which I had wanted to try for some time, at a liquor store recommended to me by a junior colleague for its good selection😋. The aroma is fruity with fresh fruitiness like apples, pears, and grapes, and a little sourness like white wine, with a little graininess, and a sweet mouthfeel. It has a sweet mouthfeel, but it also has umami, bitterness, and acidity, making it a complex wine with a very good balance. There is a slight alcohol taste, but it is not sharp and very mild. I have had Bakuren from the same brewery, but this is my first time drinking this one. It has a sweet fruity juicy flavor like strawberry syrup or pineapple, a slightly vanilla-like sweet aroma, and a juicy taste with a strong sweet and sour flavor. This is the first time I have had Harukasumi. It is said to be a sake brewed with a combination of Yamada Nishiki and Kumamoto yeast. The aroma is discreetly juicy and fruity with a slight sweetness like apples or Japanese pears, and the sweet fermented flavor also smells like yogurt. The taste is sour and sweet with a strong taste of rice. It has a fairly calm and robust flavor, and is overall mellow and well-balanced, making it the perfect sake for a mealtime drink. We enjoyed it chilled this time, but it would be delicious heated up as well. Thank you for the sake!
