Tsunan Indigo Ginjo
Tsunan Brewery Niigata Prefecture, Naka-uonuma, Gohyakumangoku
Delicious.
They also have Beni Junmai Ginjo and Kogane Junmai Shu.
I would like to try those too.
Sweetness as you would expect from an unfiltered unpasteurized sake.
When paired with yakitori sauce, the sweetness was surprisingly subdued and the sake was easy to drink.

First impression like bitter, spicy, strong.
But as you get used to it, it becomes easier to drink with a soft sweetness.
Sake degree / 0.5 to 1.5

Clean fresh, I see.
Maybe I don't like nama sake that much.
I'm starting to think that I'm expecting rice flavor and richness from the words "Niigata" and "Junmai" and it's not the case.

I was not a fan of the term "melon-apple type ginjo aroma," but when I tried it, I was instantly hooked. I really like the balance of rice flavor, acidity, and sweetness.
It has a pretty face, but the alcohol content is high, so be careful.

Alcohol content/17%.
I was surprised by the heavy sweetness at first sip.
It is a strange one, as it seems to become refreshingly sweet as you drink it over time.

I was drinking it thinking it was light, but it had a vanilla-like aroma that reminded me of Kikuyu.
It was easy to drink.

I feel that this is what "light and refreshing" means.
Dry, refreshing taste, maybe the summery label is taking away from it.

The sake brewer's recommendation is good on the rocks, but if you can prepare it snow-cold, I prefer it.
The sweetness and deliciousness of junmai chilled to a crisp.
