It has been in the refrigerator for more than a year, but it has a slight tangy, gassy feeling. It has a nice aroma and a mild mouthfeel. The mild mouthfeel has a certain density, thanks to the unadjusted nama sake. It was served chilled, but as the temperature rose, the umami flavor seemed to stand out.
