On the second day after opening, the top clearings alone are slightly classic sweet and tasty. I think it had more acidity when I opened it just yesterday. When the brewer was in town for a tasting and sale, I bought a bottle because it was delicious and reasonably priced.
Yesterday, I enjoyed it with carbonated soda, as recommended by the brewer, and straight. Both were delicious. And this evening, I tasted the top clear distillate. It is a multi-player sake that can be enjoyed in various ways and has a high cost performance. I can't believe it's been sitting here for almost a year and a half.
