This week's choice is "Saku Enochi" from Mie Prefecture. Of course, I knew Saku by name, but this was my first time to buy it. There are many varieties, but I chose Enochi without prior knowledge. The taste of the rice is very mildly sweet and the flavor of the rice spreads on the palate. This is a perfect match for sushi and sashimi. The refreshing sharpness that goes down the throat also showed the quality of the brewer. I guess you could say this is sake that is neither modern nor classic.

The liquor store warned me to be careful not to spill the bottle when I bought it, so I opened it slowly. As I expected, the moment I opened the bottle, bubbles started to appear. When I poured it into a glass, the glass was covered with bubbles as if it were a carbonated beverage and not sake anymore. The aroma was fresh. The only word that comes to mind is "delicious" because of the gaseous and silky sweetness in the mouth. The other day's Sentori Yukidaruma was impressive for its lingering sweetness, but this nigori has a wonderful freshness that cuts through the sweetness. It is so smooth and easy to drink that one forgets to drink a chaser between drinks to enjoy the taste. This is a complete sake beginner's killer. Again, a taste that overturns the concept of what is possible. How deep the sake swamp goes...

Thanks for your hard work this month. So today in the Sake Swamp Series, I brought home a bottle of Akita Prefecture's "Isshaku Suisei" special junmai sake Ryoshin. It is reasonably priced at 2,530 yen. The juicy and sweet taste first spreads on the palate, followed by a soft acidity and a lingering rice flavor. The balance of these parameters is excellent, making it perfect as a food sake. There is a Ichibakusuisei distributor near my office, so I intend to enjoy a variety of this series as well.

Hard-to-obtain sake? It is said to be a "hard-to-find" sake, but there are some places in the west of Tokyo where you can find it. I bought it immediately because there was a US version and a bottle of it on the shelf. Well, I opened the bottle and took my first sip! The sourness spreads in the mouth along with a slight sparkle. The sourness changes to the umami of the rice and the sweetness characteristic of nigorizake as it passes the throat, and disappears with a tangy aftertaste. I like Nigori-shu and have drunk many kinds of Nigori-shu, but I can see why it is so popular in terms of balance. Personally, I don't like lingering acidity, so the delicate flavor of Yukidaruma is truly delicious. I would like to make it a regular winter drink every year.

I got hooked on sake swamp and already bought a bottle of "Hanamamup" Junmai Ginjo Omachi, which I was already looking for! I was so hooked on the sake swamp that I bought the "Hanamup" Junmai Ginjo Omachi that I had been looking for. I couldn't help but drink it when I heard that it tasted like Jyushiyo, a sake I probably never had the chance to drink. I couldn't resist and opened a mouthful right away! What is this? Mellow sweetness spreading in the mouth... The delicious taste of rice seeping down the throat and ending with a crispness that cuts off any lingering aftertaste... This is the depth of sake... I would like to say thank you, rice! I would like to drink it by itself at a calm time rather than with a meal.

This time, too, I chose a brand that is a regular on the ranking list. Fortunately, there is a liquor store near where I live that specializes in Kaze no Mori, so I will continue to patronize them. The first bottle was a standard Akizuho 657, which had a lot of slight effervescence when poured into the glass, and a fruity aroma. When you put it in your mouth, you can feel the gas and the flavor of the rice spreads out. The coolness and fruitiness lingers in the aftertaste. The satisfaction of each sip is very high. It has a thick mouthfeel, so it would go well with meat dishes or yakitori (grilled chicken).

The first bottle of Sentori series was opened. Since I am a beginner, I decided to start with the popular ones. Sentori is recommended by YouTuber "SakeLabo," so I wanted to try it first. The Classic Omachi also has a soft acidity with a gaseous taste that spreads on the palate. If I were to use an analogy, it would be the sweet and sour taste of fresh strawberries in the mouth. I was surprised that it is not as sweet as I expected. So personally, I would say it is not a dessert sake, but more of a food sake that goes well with sashimi. I am looking forward to drinking the other sakes in the series!

I chose Otters as my first step into the sake swamp. This was my first time to buy a bottle of Otters. I used to buy sake only at supermarkets and chain stores, so I only just now realized that there are many liquor stores where I can buy sake at a fixed price. My tastes are fruity and umami, so I define Otters 45 as the royal road and the basic taste of Otters. The sweetness and umami of the rice spreads in the mouth, and the taste spreads down the throat without an alcoholic attack. It goes well with toro and fatty sashimi. I will continue to be addicted to sake that surpasses Ottersai. 4649!
