53% Akabane-grown special grade Omachi Aroma Sweetness similar to melon and thick fruit aroma Taste Slightly thick, with a strong sense of sweetness and thickness, and a fruity, deep sweetness. Aftertaste The sourness and the bitterness which have a sense of existence spread quickly. Comment Overall, you can feel the strength of the Omachi rice in this sake. The sweetness has depth and thickness (which can be described as umami), and the aftertaste has some bitterness, and you can feel the dignity of Omachi. Because of the bitterness and presence of the aftertaste, it is not too sweet and refreshing, and it goes well with all Japanese cuisine. Kaosake (highly fragrant) type Full-bodied umami taste

Octane grass 60%. Aroma Sweetness like kompeito, thick raw material aroma. Taste Slightly weak, but sweet and thick taste. Aftertaste Slightly long and refreshing acidity runs through it quickly. A word of comment Thanks to the method of flat polishing, the rice has been cut down flat, so that the richness of the rice is retained, while at the same time the sake is crisp and clean. These two characteristics are a little difficult to coexist, but thanks to the special grinding method, you can taste both of them in this interesting sake. Souzake (light and smooth) type, mellow sake (full-bodied) type Rich and dry

40% Yamada Nishiki from Nishiwaki City, Hyogo Prefecture Aroma Thick and sweet fruit aroma like melon. Taste Sweetness with a sense of transparency Lingering aftertaste The acidity spreads slowly in the mouth. Comment Although it is compared to the Hououmita, it is quite clear and has a beautiful sweetness compared to the other Kobayashi Shuzo sakes. However, even though it is clear, I feel that it expresses a clear sweetness while retaining the "Hououmida character". It is an easy to drink cup. Kaoru-shu (highly fragrant) type Full-bodied sweet taste

Domestic rice 60%. Fragrance Slightly intense sweet and acidic raw material or fruit notes. flavour Slightly sweet with a sour base. The aftermath Slightly fine acidity spreads gently. Comment According to the brewery's owner, "We brewed each sake separately and blended them to emphasize the aroma and the impact of the acidity. It's true, and I get the impression that the individual personalities that are difficult to achieve in a normal sake are all living together in a well-balanced manner and influence each other. It's a good example of an unusual kind of sake that you can't enjoy in a normal sake. Refreshing (light and smooth) or smoky (fragrant) central entrance

It is not suitable for those who like a strong taste and aroma, but it is suitable for people who are just starting to drink or for eating and drinking sake. Five million gems 55%. Fragrance Weak but tart fruit notes on the palate. flavour Lightly acidic and slightly concentrated The aftermath Sourness gently spreads in the mouth. Comment It is exactly the kind of dry sake that is light and easy to drink. The acidity in the aftertaste is great, but the sense of condensation in the mouth is modest, and I got a crisp impression. It can be drunk like water, and I think it's good as a food sipper. Soushuu (light and smooth) light and dry

Pumping from a depot, bottle heating, Omachi 50%. Fragrance Weak, yet acidic and refreshing. flavour Sweet, rich and citrusy The aftermath Quite weak, but with a long, slightly acidic taste that spreads on the palate. Comments The aroma is weak, so it is hard to judge it as a high-scented sake, but it has a sweet, thick and citrus taste. I think it's a good choice for people who like the rich sweetness of sake. I had the impression that this sake goes better with meat than with fish. Soushuu (light and smooth) Rich and sweet

Ginpu 48%. Fragrance Muscat-like sweetness of fruit flavour Balanced taste of sweet and sour The aftermath Slightly bitter taste spreads with acidity. Comments From the scent, you can smell the fruity fruit scent that is typical of a flower and sunbath. Moreover, it is not just Muscat, it has a very refreshing aroma that is very pleasant. It has a very well-balanced flavor of sweetness and sourness that is typical of Kanyangkyo, and it fills the mouth. The flavor is very assertive, so I felt it was preferable to drink it alone rather than as a sipping sake. The Ginpu-like flavor is evident in the aftertaste. At first, the sourness spreads gradually, but halfway through, the bitterness spreads with it, accentuated by the characteristic aftertaste, and you can't help but reach for the next one. Kaoru-shu (highly aromatic) Sweet and full-bodied

Super dry rice ratio 70%. Fragrance Concentrated raw incense. flavour It's very concentrated, like dried fruit. The aftermath The acidity lingers softly and finely. Comments For the sake rating of +8 (+8) and super dry, the acidity is a bit low, which made it easy for me to drink. I got a sense of concentration in both aroma and taste, which is the essence of this sake. The acidity is not known, but it is probably not high. I think the low acidity accentuates the sense of condensation. Full-bodied type dry taste (e.g. sake, wine, soy sauce, etc.)

Yamadanishiki 60% from Nara Prefecture Fragrance Sweet, thick, slightly acidic, fruity with a hint of pineapple fruit, fruity. flavour Slightly thicker texture, sweet and sour. The aftermath Slightly long and firm, with a strong acidity that spreads quickly and stays there. Comments The aroma isn't particularly high, but the fruity and gorgeous aroma of Yamada-Nishiki makes me think it's a sweet and gentle sake. On the palate, the sweetness and thickness of the sake were weak, and while it was weak, it was sweet like a melon. However, the sourness spread quickly and strongly in the aftertaste, and was the strongest impression I had. At first I thought it would be a sweet sake, but the aftertaste made me think that this sake is more crisp than sweet. The judgment of whether it is dry or sweet depends on the person who drinks it. Soushuu (light and smooth) dry taste (e.g. sake, wine, soy sauce, etc.)

Gifu Hatsushimo 60%. Fragrance Weak, but with a melon-like thickness and sweet fruitiness. flavour You can sense the flavor and acidity of the rice. The aftermath The acidity is emphasized slowly and long. Comments In the aroma, there was a weak fruitiness, and at first I thought it was mainly a sweet sake. However, when I took a sip, the texture was smooth, and although I could sense a little rice flavor, the acidity was strong and refreshing. Furthermore, the aftertaste was softly long and seemed to emphasize the sourness, making it a crisp sake. Overall, this sake is characterized by a pleasantly refreshing and refreshing sensation with little chaos and a crisp finish. Soushuu (light and smooth) light and dry

4-stage glutinous rice brewing Malted Rice type: Gohyakumangoku Kake: Yumenoka Hymeno Motif Fragrance Melon sweetness and thick fruitiness are strong in this wine. flavour Slightly quiet, thick and sweet like a melon. The aftermath The sweetness spreads, not the sourness. Comments This is a sake that is made with a strong focus on the rice, yeast, water, and even people from Fukushima Prefecture. First of all, it has a strong aroma, with a thick, sweet fruit aroma like a melon. The taste is not very strong, but it has a gentle, elegant and deep sweetness. In addition, the aftertaste is not acidic, but melon-like sweetness that spreads quickly and disappears. The sourness often leaves a strong impression in the aftertaste, but it is a sake with a thick sweetness like a melon that lingers until the end. Yamadanishiki 50%. Fragrance A sweet, fruity, muscat-like aroma. flavour It has a fresh sweetness like Muscat with gentle acidity. The aftermath A firm acidity gently spreads in the mouth. Comments It is a very elegant sake. The use of French in the name suggests that they are confident in the elegance of this sake. The aroma is also very elegant and fresh like Muscat. The aroma from the nose is stronger and more muscat-like than the first time I smelled it. The taste was also elegant and equally muscat-like, with a clear sweetness." I think this is a sake that suits drinking in a wine glass. Kaoru-shu (highly aromatic) Sweet and full-bodied

Miyamanishiki 60%. Fragrance Citrusy acidity and a little bit of sweetness with a weakness to it. flavour Strong acidity and citrusy (almost tangerine) sweetness. The aftermath Slightly long, citrus-derived (citric acid) sourness spreads. Comments I had never heard of the "Shiraku-shiki" method, but I found out that it is a unique name for sake made with white koji, which is made by Oya Ko Shuzo. This white koji is not usually used for sake (usually used for shochu and yellow koji for sake), but it is unique in that it produces citric acid. As a result, the aroma is sour and the taste is sweet like oranges but with citric acid. Because of the strong sourness, the aftertaste is crisp and clear, and I think this sake can be drunk easily. It is very rare to brew a sake with white koji, so it is good to drink it as an unusual kind of sake. Soushuu (light and smooth) fluent

Kura no Hana 55%. Fragrance A refreshing aroma with a hint of bitterness and acidity. flavour Slight acidity and clarity. The aftermath A weak acidity gently spreads through the air. Comments It can only be described as having a simple aroma and taste. In the first place, the brewer is aiming for the "ultimate food juggernaut" that can play a supporting role and go with everything, just like the oolong tea in the dining room. Considering that, I think the aroma and taste, which is very simple and mainly sour, is close to what the brewer is aiming for. By the way, we tried pairing it with not only Japanese food, but also Western food that is a bit fatty, and it went well with Western food. I think it's truly the ultimate foodie drink.
