Hakkouda Oroshi Daiginjo Directly Pumped Raw Sake (Aomori) This is a gift. It is the thing which my hand came out of. It is a product of Hato Masamune in Towada City. The umami, acidity, and sweetness are all rich, and it's a daiginjo-like sake. Rather than being neat, it has a bit of complexity with a hint of bitterness. It has a high alcohol content of 17 degrees, so it packs a punch. I think it tastes best when it's heated up rather than cold. Aomori uses the name Hakkouda for many things. I once worked at the prefectural Hakkouda High School, which was closed a long time ago.

Kamoshibitokuheiji山田錦 EAU DU DESIR純米大吟醸

Yamada Nishiki EAU DU DESIR. Last time it was Omachi and this time it was Yamadanishiki. It was served in a wine glass as written on the back label. The aroma is gorgeous and fruity. There is a bit of gas, and after feeling the current style of acidity, the rich flavor comes. It has a good amount of aftertaste, and it was perfect with cheese. I also tried it warmed, and the gentle sweetness and acidity increased, giving it a richer taste. It's delicious.

Mimurosugi辛口 火入れ特別純米

Finally I could drink Mimurosugi. It is the first Mimurosugi. It is a well-balanced sake with a calm and relaxed taste. The taste is very close to my own strike. It is delicious as a regular sake that goes well with everyday drinks and meals, and also as a stand alone sake. Anyway, the balance is great, and the acidity, umami, sweetness, sharpness, and fruity taste are all where you want them.

Ugonotsuki岡山朝日米純米大吟醸

This is the first time I drank Amago no Tsuki. It is a very sweet sake because it is Junmai Daiginjo. The aroma is gorgeous and fruity. You can feel the rich fruits, pineapple and mango. The acidity is firm and surprisingly crisp. It is like a fruit liqueur, and can be drunk on the rocks.

The sweetness and umami were moderate, the acidity was firm, it went well with the food, it had a citrusy fruity taste, it was clean, it had a short finish, and it was crisp. We had this one at Fuukurasan, too.

Okunokami. A sake from Tokyo that I've wanted to try for a while. It's quite sweet, quite fruity, women seem to like it, and it's probably better to drink it on its own rather than with food. Or, it might be good with something sweet. We also had this one with fukura-san.

I had heard a lot about it, but when I actually drank it, it was such a delicious sake that it changed my concept of sake. From the beginning to the end, there is almost no alcohol or miscellaneous flavors. It was refreshing, fruity, sweet and delicious, all the popular elements of modern sake. I highly recommend it to women and people who have a bad image of sake. We had it at Fukura-san in Goshogawara City, where we are often treated to delicious sake. You can't buy it at a fair price on the internet, and it's almost impossible for normal people to buy it on the regular, so I think it's best to drink it if you find it in a restaurant. Even so, it's still quite pricey.

The aroma is gorgeous. When you drink it, it's like a sweet and rich pineapple, with some acidity, a little bitterness and alcohol, and a long finish. Anyway, it is full-bodied. The impression is quite different from the special junmai I drank before. I think it will go well with cheese and fruit.

Hakurakusei Special Junmai (Miyagi) As the sake brewery clearly states, this is the ultimate food sake. I haven't had any other specs, but as a special junmai, it is refreshing and light. It doesn't get in the way of the meal, and has a nice blank space that makes you want to eat meat, fish, simmered dishes, and many other things with it. We had it with seafood, and it was perfect. However, if you drink it by itself, you may feel a lack of it. Next time, I'll drink it hot with oden or in a pot.

Mutsu Hassen Special Junmai ISARIBI (Aomori) This sake is brewed in Hachinohe City, a port town, for seafood. I drank it while eating grilled squid. The sweetness of the squid was well matched with the flavor of the squid. We also had Hoki-gai sashimi, which was also great, and we were surprised that it went so well with it. If you drink it on its own, it's still spicy and refreshing with a clear acidity. However, because it is a nama-shu, it is slightly gassy and juicy. However, it leaves a lingering aftertaste to match the food. It is a food sake to match with seafood. Next time I would like to try it with steamed clams.

Miya Kanbai Junmai Daiginjo Miyamanishiki (Miyagi) It has a gorgeous aroma typical of Junmai Daiginjo. It is fruity. However, it has a sourness and a moderate sweetness that makes it easy to drink. For Japanese food, it is good with a light dish with soup stock, and for Western food, it is good with cured ham, cheese, bagna cauda and so on. Of course, it is delicious by itself.

It smelled good. Rich and delicious with no miscellaneous flavors. The flavor is like a peach with honey and lemon. It's also gassy and piquant. If you want to have it with something sour, you might want to have it with western food. Of course, cheese goes very well with it.

It is oregami. This white label is too easy to drink! It's the kind of sake that has no miscellaneous flavors, bitterness, alcoholiness, or any of the other elements that people who don't like sake worry about. It is an origarami sake with a really exquisite sweetness that makes you drink too much.

It is Gohyakumangoku. When uncorked, it has a fruity ginjo aroma. It is very juicy and full. It has an apple-like flavor and clean acidity. There is almost no bitterness or spiciness, and it is easy to drink and has plenty of umami. It is easy to drink even for women and people who are not good at drinking.

It has a nice sourness and richness from the lactic acid that is typical of Yamahai. It's good as-is, but drinking it hot or lukewarm shows its true potential. The price is 1,210 yen for a 4-pack bottle, which is a great price.

This is my first sake from Kanagawa, Zanko Horai. It's an autumn sake, so it has a strong umami and acidity. It is dry and refreshing. I think it goes well with autumn foods and battery type foods. I had it hot and paired it with tempura and it was very good. It would also be good with simmered pork belly and daikon, or grilled fish with fat.

It was given to me by a university friend in Shizuoka. It was my first time to drink Isoban. It has a melon-like flavor and a delicate umami that is similar to a daiginjo with little miscellaneous flavors. However, it is not sweet, but a type that can be drunk neatly. It can be drunk on its own without tiring. It was a treat.

It has a fruity aroma. As you would expect from a Junmai Daiginjo, there is no miscellaneous flavor. And it has the sweet and sour taste of apricot fruit wine, but also the flavor of the rice. The spiciness is quite moderate and easy to drink. It seems to go well with cheese and fruit snacks.

I looked at the label and saw that it was made in December 2015! What a surprise, it was aged for 5 years as a raw sake, and it was indeed very rich. It has a dense peach-like aroma and sweetness, followed by a slight citrus freshness. It is dark and tart in appearance. It is rich like honey. It has a slight spiciness at the end. I think I would like to drink it with something sweet or fruit.
