The aroma in the mouth is very discreet, but has a deep, mellow aroma with a good aftertaste. Tonami City in Toyama Prefecture is famous for its tulips. It is said that it is the best place for tulips because there is a lot of snow and the temperature and humidity are just right for bulbs. I would like to see tulips at Tulip Park, eat Toyama Black Ramen, and finally drink Tateyama on site.

I like the aroma and taste. It is really delicious. It has the freshness that only nama sake can have, but you don't feel the strength of the alcohol. The aftertaste is refreshing, and you can't stop drinking it. Momogawa from Oirase-cho, Aomori Prefecture, is one of Aomori's representative sake breweries. I have never been to the Oirase mountain stream, so I would love to visit the area and drink Momogawa in my hometown.

This sake brewery is located in Higashinada Ward, Kobe City, and has a long history, having been brewed in 1625. It was founded in 1625, 10 years after the Osaka Natsu no Jin (Osaka Summer War), which means it was right after the Tokugawa period. It has been brewed since the time of Hidetada Tokugawa and Iemitsu Iemitsu, so you can feel the history of this brewery. It seems that Sakura Masamune did a great job in making Nada sake famous in Edo. It has a gentle but delicious sweetness on the palate with little cloying taste. It goes well with a variety of snacks. The freshness of the sake is also good, and the strength of the alcohol is not too strong, making it easy to drink.

I bought this at a roadside station in Ota, Gunma Prefecture. It has a unique sour taste. The sake is brewed with natural lactic acid bacteria from the brewery using the traditional Japanese method of "Yamahai" yeast mash. It is not a sake to be drunk crisply with snacks, but a sake to be enjoyed for its unique deep flavor. It's not my favorite, but it was a fresh encounter. This is a little off topic, but the green onions at the roadside station were really cheap. Gunma is known for its leeks. Grilled leeks and sake are the best.

I went to Tochigi for a day trip. I stopped at a roadside station and bought some local sake. I'm sorry to say that I didn't know this sake because it is not famous, but it was a sake made with Tochigi Oyama in mind. The sake rice is made from Yamada Nishiki produced in Oyama, and the name is also the Oyama, after the Oyama Gion Castle, the guardian of Oyama with a history of over 450 years. It is delicious with a gentle taste and a clean aftertaste. It reminds me of the rich countryside of Oyama. Tochigi is also famous for its sake, but encountering local sake that is not widely available in the market is one of the joys of sake.

It's the oldest sake brewery in Iwate, Kikunoji Shuzo. It is a sake brewery that specializes in using Iwate sake rice and brewing with soft water. My mother was born in Iwate, and I have many memories and feelings about Iwate. Is it easy to drink? Do you never get tired of drinking it? No matter how much I drink, it always tastes good! I thought. The area of Iwate Prefecture is almost the same as Shikoku, and if you exclude Hokkaido, it's the No. 1 prefecture in Japan, and although it's all mountains, it's rich in nature. It's been a long time since I've been to Iwate, and I'd like to visit the local breweries in Iwate, which I didn't know about when I was a kid.

I guess it's the playful spirit of snowy Matsushima. It's a lightly nigori Junmai Nama Genshu. The moment I drank it, I thought, "What! I thought it was slightly carbonated. The aroma of the unrefined sake was original, and it was a different kind of delicious sake. The brewery's playfulness is really interesting, and it's delicious without being flattering. I would like to drink this sake again. The fox and tanuki labels are also very tasteful, and the playfulness is stylish and wonderful. The shipping quantity seems to be small, but if you come across it, I think you should buy it.

It's a sake from Yonezawa, Yamagata. I didn't know about this sake. There seems to be a series of sake depending on the rice and milling ratio. The motif of the sake is a hawk, named after Takayama Uesugi, who is said to be the founder of the Yonezawa clan. If you do it, you will do it, and you must do it. If you don't, it's because you didn't do it. However, the second sentence is the most important part of the phrase, "The reason you can't do it is because you don't want to do it. It is said that the sake brewery has never forgotten Takayama's idea and is striving to make sake in Yonezawa. There is a story behind the sake, and I feel that it tastes much better than just drinking it. The taste is wonderful, with a mellow aroma in the mouth. It was the first time I had ever tasted sake rice called Tsuya-hime. I wonder if Yonezawa will get more than 1 meter of snow this year. It's been a while since I've been to Yonezawa.

It's gentle on the palate. But the aftertaste is a bit alcoholic. It's actually 14 degrees of alcohol, which is not that high. There are not many sake breweries in Tokyo, but this is a historical sake brewery in Fussa. Fussa is home to the U.S. Yokota Air Base. The combination of an American town and a sake brewery that has been making sake since the late Edo period (1603-1868) is quite an interesting combination, and I can imagine many things.

I didn't know about this sake, so I thought I'd try it, and when I tried to buy it, the owner of the liquor store asked me, "Have you ever tried it? It is a unique sake with a strong acidity, so if you don't like strong acidity, we don't recommend it. We are very particular about the rice and the brewing process, so it has a strong flavor and it's clear that it doesn't suit everyone, but is that okay? If you are told that, you will want to try it once, right? I said, "I want to drink that kind of sake," and bought it. Even before I took a sip, I could already tell from the unique aroma how strong the acidity was. I think the best way to describe the aroma is not good or bad, but bran-like. It is said that in the days when there was no rice polishing machine, even 80% of the rice was highly polished. I wondered if this was the kind of sake that the characters in Japanese history drank. Personally, I wanted to act like an expert, but to be honest, I didn't think it was for me. But drinking it without knowing anything about it and drinking it with the liquor store owner's previous information were different. I wanted to try it on my own, so I feel satisfied in that respect. I'm sorry, I don't know much about sake in Wakayama. But this sake was really good. I bought it at a local liquor store and had no previous information, so I was half-expecting and half-anxious, but encounters like this that exceed expectations are the joy of local sake. Next time, I'd like to try it with local food in Wakayama.
