I bought this at a roadside station in Ota, Gunma Prefecture.
It has a unique sour taste. The sake is brewed with natural lactic acid bacteria from the brewery using the traditional Japanese method of "Yamahai" yeast mash.
It is not a sake to be drunk crisply with snacks, but a sake to be enjoyed for its unique deep flavor.
It's not my favorite, but it was a fresh encounter. This is a little off topic, but the green onions at the roadside station were really cheap. Gunma is known for its leeks. Grilled leeks and sake are the best.
