Even before I took a sip, I could already tell from the unique aroma how strong the acidity was. I think the best way to describe the aroma is not good or bad, but bran-like.
It is said that in the days when there was no rice polishing machine, even 80% of the rice was highly polished. I wondered if this was the kind of sake that the characters in Japanese history drank.
