Memorandum Kangiku Meikyu brews only once a year, and the "Occasional" series is a super-limited edition of unfiltered sake. Focusing on "scenes" and "feelings," the "Silver Lining" is a limited edition unfiltered sake brewed only once a year to add color to everyday life (special moments) from a different perspective than the four seasons. So-no-Mai" is a variety of rice with a large heart white that is suitable for high refining. We designed this limited edition sake to be the most highly refined sake in the history of Kangiku, and perhaps in the history of this rice, in order to make the most of the characteristics of the rice and to "create a product that will surpass our own limits and allow us to look to the future. The label is inspired by the image of infinity beyond the horizon of Kujukuri. This is a bottle that the toji has put his heart and soul into, pursuing a texture from the attack to the finish! The "G" in "IMPRESSION-G" is the "G" in "Gennochi IMPRESSION-G" is a sake that corresponds to the directly pumped version of "Gen-no-chi. Gennochi" is one of the brewery's representative brands that has won awards in various contests. It has a refined taste that is typical of Kyokai No. 7 yeast. Memorandum This Junmai Daiginjo-genshu is made from "Momota," Akita Prefecture's original rice suitable for sake brewing, grown under contract in the locality where the brewery is located, polished to 45% and brewed under 16% alcohol by the Akita-style Nama-moto brewing method without water splitting. Momota" is a rice developed by Akita Prefecture for sake brewing, and was bred at the Akita Prefectural Agricultural Experiment Station from a mother "Aki-keisake 718" and a father "Misan-nishiki", and is descended from Yamadanishiki and Miyamanishiki. Akita-style Nama-Moto-zukuri is a unique Akita method of brewing in which the rice is ground with a stirrer (electric drill) rather than manually with an oar stick. The brewery's motto is to "enjoy fermentation, take time and effort to make what we want to make with curiosity, and create overwhelmingly delicious sake. This is "Ipponjime," a junmai ginjo-shu made from a cross between Gohyakumangoku and Toyohai, which is a rice variety suitable for sake brewing. The finish of the 2023 vintage was harsh, with low yields and a tendency to crack. Therefore, the annual brewing of three tanks of yellow rice was reduced to two tanks this year. In addition, the lees ratio was raised to 70% in order to give a fuller flavor, so this bottle is filled with a truly precious drop.
