[Memorandum] Locksmith Quote This is an "active nigori" sake with a gaseous taste. Unlike the first impression with plenty of oori, it is not sticky, but rather a dry, active type. The ori, or ori, drifts slowly to the bottom of the bottle. This is no mere ogori. It is an ooze born from the sake "Hirotogawa". The first thing to do is to start with the supernatant part. (The gasiness is like an outpouring right after opening the bottle, but it settles down after 5 minutes.) You can feel nuances like white peaches in the smooth mouthfeel. The supernatant is good enough.... Then gently stir the cage. What an impression-changing sake! From a smooth mouthfeel, it quickly developed a juicy flavor with a soft sweetness. The acidity (which is really good) rides on top of it, leaving a moderate sharpness and a lingering aftertaste. Although it is a junmai (pure rice) sake, it has a luscious umami, and you can enjoy both spiciness and sweetness. This sake is not just a simple sake!

Memorandum] Imadaya Quote Inside the bottle with a cute illustration of a snowman is pure white nigori sake. It has a sweet aroma like wasanbon and a silky texture. The alcohol content is light at 13%. The tangy gas that is typical of active nigori can be felt, and the sake finishes with a clean, dry impression that keeps you going back for more. Yamada Nishiki harvested at Domaine Sakura in Sakura City, Tochigi Prefecture, Senkin's hometown, is used. Memorandum] Quoted from IMADEYA Tamaei was born after training as a warrior Nichinichi Jozo was founded in Kyoto by brewer Hidehiko Matsumoto. Nichinichi Jozo pursues sake brewing that brings out the smooth and deep flavor of the brewing water that falls in the Kyoto basin, and brews sake that can be enjoyed with food more deliciously. This bottle is made from "Tamakae" sake produced in Kohoku, Shiga Prefecture, through the connection with Tomita Shuzo, which brews Shichihonjari, a sake also featured in the "Musha Shugyo" series. Tomita Shuzo has been a pioneer in the use of pesticide-free and pesticide-reduced products. This year's Tamakae was quite hard, but since it was a one-time brewing, the brewery made a lot of fine adjustments. The flavor came out more robust than expected, and this is one bottle you can enjoy now. Of course, as you would expect from Hidehiko's sake, it has the potential to age for a long time, so please enjoy the different flavors at different times of the year. The bitterness characteristic of Tamakae is moderate, and the sweetness and umami of cooked rice can be felt in this light and enjoyable bottle. The alcohol content is low at 12%.

Memorandum Quote. DATE SEVEN" is a joint project by seven famous breweries in Miyagi Prefecture, which will make a new start as SEASON 2 in 2022. All of these brands are world-famous brands from Miyagi, and they stand side by side with each other. DATE SEVEN, brewed by such breweries working together, is very popular not only in Japan but also in overseas markets. This time, two different sakes were offered, each using a different leader brewery and yeast. The leader brewery is Yamawa (Yamawa Sake Brewery), and each process is as follows: rice polishing: done by each brewery; raw material processing: Suminoe (Suminoe Sake Brewery); koji: Katsuyama (Katsuyama Sake Brewery, the official brewery of the Sendai Date family); mother: Urakasumi (Saura Brewery); unrefined sake: Hakkusei (Shinzawa Brewery); top fermentation: Koganezawa (Kawanei Shoten).
