This Junmai Daiginjo-genshu is made from "Momota," Akita Prefecture's original rice suitable for sake brewing, grown under contract in the locality where the brewery is located, polished to 45% and brewed under 16% alcohol by the Akita-style Nama-moto brewing method without water splitting.
Momota" is a rice developed by Akita Prefecture for sake brewing, and was bred at the Akita Prefectural Agricultural Experiment Station from a mother "Aki-keisake 718" and a father "Misan-nishiki", and is descended from Yamadanishiki and Miyamanishiki.
Akita-style Nama-Moto-zukuri is a unique Akita method of brewing in which the rice is ground with a stirrer (electric drill) rather than manually with an oar stick.
It has a slightly gorgeous aroma with nuances of banana, melon, and strawberries, a mildly smooth mouthfeel, a youthful, powerful, firm flavor, and a fresh, supple acidity that is beautifully integrated.
