Introducing "Junmai Ginjo Nama Shu", a seasonal product from Hirotogawa, a famous sake brewed by the prestigious Matsuzaki Shuzo in Fukushima, Japan. It is made from 50% polished rice of Yume-no-Ko (fragrance of dreams) grown in the prefecture. This Junmai Ginjyo Nama-shu is brewed with a yeast developed in the prefecture, and is made with all Fukushima Prefecture ingredients that are unique to Hirotogawa.
It has a pleasantly sweet aroma of apples and cranberries, with a hint of alcohol that is typical of nama-shu. The palate is filled with dense sweetness and mellow umami, accented by a well-balanced acidity derived from lactic acidity and a tangy bitterness that gradually seeps out from the sweetness. After opening the bottle, enjoy it at a leisurely pace and let it air out to enjoy its mellowness.
