Last night was a New Year's party with a couple I met last year. We had dinner at a nice restaurant and then went to Kokubuncho. After the fourth bar, I finally had a chance to drink sake. I have known the owner of this sake bar on the outskirts of the city for about 25 years now. The lighting doesn't look like it's the kind of place you'd enjoy sake, but don't worry about that. The selection is quite good, so go for something you've never tried before. First up is Hiryu, the one with Tatsumi Fujinami's red towel. A dry sake with a refreshing yet tasty flavor, just like Mr. Shinzawa! Thank you very much for your hospitality!

The same mild aroma as the first sip, soft rice flavor and moderate sweetness spreads with a little acidity, and finishes quickly with a hint of bitterness and a little alcohol spiciness. Overall, it is refreshing and easy to drink. It is good for accompanying a meal, but it may be too smooth as a stand-alone sake. When you drink it, you feel the overwhelming umami and mild sweetness of Koshitanrei. The alcohol is not too strong, and it quickly passes through the mouth and finishes off. Of course, the freshness of the new sake is perfect. It has no modern elements, so it is a classic, but it is the supple alcohol and sharpness that distinguish it from other dry sake. Above all, it is the umami of Koshitanrei! This is the best! This is Niigata sake! I love it again this year.
