It is Kamikawa Taisetsu Shuzo's Kamikawa Junmai Sake. It was purchased at a Seven-Eleven in Sounkyo, Kamikawa-cho. It is a good sake with good acidity and sharpness. It is good to drink at room temperature.

It is a sake limited to the Asahikawa area, but you can find it in restaurants these days. It has been a while since I drank it, but the label seems to have changed. It is fruity, refreshing, and easy to drink. It is a good and inexpensive sake with a nice taste of rice. ‼️

It is the sake which is sold in the Seven-Eleven of Kamikawa-cho or Sounkyo in Hokkaido. I bought it as a souvenir for my wife on the way back from a snowboarding trip to Kamikawa in March. I always buy it when I go to Kamikawa area... It's really good!

I've been making my way to restaurants with good service lately. Today they served me a fresh aged sake. Today is February 6. This is my first Kinkame. My first impression was that it was very good! Next, it has a strong umakuchi taste. The acidity at the end is good, just like Yamadataro. It is like a light kijoshu, and it is delicious. Shiga is nice.

This one has a milling ratio of 80. Full of sweetness! It spreads slowly in the mouth.

In Sakewa, there are two separate brands, Kinkame and Kinkame, which is the correct one to register? Kinkame's "Drink this" is 70% polished. It has umami, richness, and a moderately classic feel. This is also a delicious sake.

I was in Akashi on a business trip 🚄 First time I got off at Nishi-Akashi and had local sake heated with Akashiyaki 🐙 which I haven't had in a super long time. It feels spicy at first but the sweetness comes later 😯 Surprisingly, I like it a lot 😊. I'll drink it again when I go back to Akashi 😁.

The restaurant does not seem to be a sake store, but the lineup always draws me in. This time, I ordered "SENKOURI" and this was the sake I ordered. Fresh! But almost no acidity. But there was almost no acidity, and a slight bubbling sensation on the tongue. The dishes were sashimi of flatfish and fried red mullet. Oh, yummy! I'm glad I ordered it. (^^)

Senkou's Hansui UI. The rice is polished to 80%, so it's not light, but it's not heavy either. Anyway, it was delicious. As with Mizu to Echika, Senkin-san makes delicious sake.

Like Minatoya Toisuke, this is another brand of Murasuke that I bought because I liked it after tasting it at Ponshu-kan in Echigo Yuzawa. There are many liquor stores that sell Murasuke in Tokyo, but I had never seen this brand before. As its name suggests, it's low in alcohol content at 13%, so it's easy to drink 😚. When you drink it cold, it's light and refreshing, with no hint of bitterness. It's delicious in its own right, but when it's chilled at a cooler temperature, it becomes sweeter and more impressive. I liked it best when it was chilled in the wine cellar at about 15 degrees Celsius 😄. It's interesting to see how it changes with the temperature, but in any case, it's a different direction from the sweet and sour fruity Murasuke. I think it's a fine sake that won't go with any snacks 😋

When I see the name Bodhi Hashimoto, I tend to pick it. It is a refreshingly light, light and umami taste. I think I prefer the blue bottle I bought before. thanks KURA Taro (Sapporo)

Next is Bishu Kotobuki's Kame-no-o + No. 7 Orikarami. This was also freshly opened. First, it was served cold. The first aroma is faintly sweet. In the mouth, there is a slight acidity, umami, and sweetness. It gradually finishes with a slight astringency that is typical of Kame-no-o. Next, it was served warm. The first aroma is faintly sweet. In the mouth, it has a slightly robust umami and sweetness. The taste is slightly astringent, which is typical of Kame-no-o, and it gradually fades away. It tastes better when heated up too.

The first saké I had last time was a clear saké of Yumeginko from Bishu Kotobuki with No.7 yeast. It is a draft sake, but it was stored at room temperature at the store, so we served it as it was. The first aroma is sweet with a hint of banana and ripe melon. In the mouth, the sweetness and umami are again like banana and ripe melon. The flavor profile is even clearer than last time, sweet and delicious 🥰. I think this sake tastes better if you let it sit for a bit after opening. It was delicious 🍶✨

Finally, we had a bottle of Yumeginko +7 Sumi-shu. This was also freshly opened. First, it was served at room temperature. The first aroma is faintly sweet. In the mouth, there is a moderate acidity with a hint of sweetness and umami like banana or ripe melon. The flavor profile is clear, probably due to the lack of orikura. Then warmed up. The first aroma is faintly sweet. In the mouth, it has a sweetness and umami like banana and ripe melon. The moderate acidity adds a nice accent. Both cold and warmed sake were delicious. I think this was also the best of the three. They have 2 types of Sumi-shu and 1 type of Oragara-mi that I haven't tried yet, so I have to go drink them 😋.

Fruity and floral as the name suggests. It is not too sweet and easy to drink. Takaraiya has a lot of sober sakes, so when introducing them to newcomers, this area seems to be better received.

At home. It is still delicious Kaze no Mori. It is characterized by the "swoop" when you open the bottle and the tingling sensation on the tip of your tongue when you put it in your mouth. The aroma is of ramune, and the taste is of ramune and slightly young melon. It's a gem that will change your view of the world of sake. There are so many kinds of sake that you will always be confused about what to drink.

Invigorating
Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake. Even so, I heard that the owner stubbornly continued to make sour sake. (^○^) Nowadays, with the Shinsai boom, Yoemon's sour sake is also selling well, especially outside of the prefecture. This sake itself is light and refreshing. It has a mild taste that does not interfere with meals. It was very tasty. ( ´ ▽ ` ) No
