I actually had it yesterday, but since it is a special junmai, I compared the two. We will drink it cold. The color is clear and almost colorless. The top aroma is mild and not very noticeable. The taste has a robust rice flavor, sweetness, and a nutty, chocolate-like complexity. It is rich and mellow, but compared to Saka, it has a more traditional country-style flavor. The aroma on the nose is bitter and chocolatey. By the second day, the chocolaty flavor has settled down, and a clear, mineral, full flavor emerges, making it easier to drink. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio: 60 Alcohol content: 15 to 16 degrees Celsius

Saga, Saga Prefecture, Japan. Saga Brewery Co. Saka Tokubetsu Junmai Nama Nama Zake. Purchased after tasting at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. Saka is a new brand, and is apparently better known as "Ume" (window plum). It is served cold. The color is clear with a slight yellowish tinge. The top aroma is mild, with a slight hint of alcohol. The mouthfeel is smooth with a slight flocculation, and it does not feel fresh to the extent that it should. On the palate, there is a little bit of juicy acidity, a little bit of tangy alcohol, and a nutty, full flavor that spreads. The aftertaste is a bit of a sharp spiciness, with a slight throat hit after swallowing. I bought it thinking it would be sweeter and more umami, but it was surprisingly dryer than I expected. Abeno Harukas Kintetsu Main Store Sake Expo 2025 SAKE EXPO① After receiving a reconnaissance mission from bouken, we first visited Saga Prefecture's Saka Sake Brewery. The brewer was an Italian. He speaks fluent Japanese. He used to be a language teacher in Japan, but was scouted by the brewery. ◯Saka Junmai Ginjo Nama It has a firm flavor and freshness. It has a chocolatey taste, but it is well balanced. The alcohol content is 17%. ◯Saka special junmai draft It is also full-bodied and fruity. ◯Mado no Ume Junmai Daiginjo Hananoi It is clear and has a slightly spicy but refreshing aftertaste. ◯Mado no Ume Junmai Ginjo It has a clear acidity and a slightly spicy aftertaste. ◯Mado no Ume Special Junmai According to the brewer, it is suitable for hot sake. I was looking for a property today, but there was a sake store nearby, so I bought some on the way home! I didn't buy it this time, but it was a good sake store that also had Kuroryu and Hakusan ✨. It is very tasty without being nigori (sweet sake) like! The moment you put it in your mouth, a slight carbonation bursts out. The moment you take a sip, a slight carbonation pops in your mouth. It is a strong taste, but the slight carbonation makes it easy to drink. I don't know if it's because the brewery is good, or because it's new sake, or because it's unpasteurized, I would like to try other nigori sake.

Second souvenir from KazKaz. It is a brand name planned and sold by 7 sake stores in Aomori. Rice used is 100% Hanasoui. The top-tasting aroma is a calm ginjo aroma. The mouthfeel is slightly sweet with a strong umami flavor. The aftertaste is reminiscent of classical sake, and is quickly cut by a refreshing acidity and bitterness. Tonight, our first series of impactful jackets here 💁. It's Taxi Driver🚕🚕🚕🚕. It was shipped from the brewery in April this year, but what a H30BY (R0BY) and it's a 5 year aged sake 😆. The aroma of old sake, which also smells like Shaoxing wine, is in full swing from the moment the bottle is opened 🤣. It was served cold, but it is easy to drink because of its acidity. It would be good to drink it warmed up in the fall. ☺️ I wonder if it would go well with Chinese food since it has a Shaoxing sake-like flavor, and I'm going to research how to drink it based on other sakewa reviewers 💪. But it's a very intoxicating drink so I'll stop after one cup 😓.

First drink. Weak fruity feeling that I didn't imagine from the label that has impact. But it is also full. There is a miscellaneous taste (my personal feeling) like the Yamahai brewing style with low rice polishing, but it is a moderate level, so I feel it is unique. It has just the right amount of sweetness to satisfy my preference for sweetness. I enjoyed it with a plate of delicious sashimi (´ω).
