The taste is rich but light on the palate. It is even softer when heated. It has a moderate aromatic richness and a little bit of spiciness. It has a good balance and can be served with a wide range of food. It is a limited edition sake, but it has a standard taste. Mr. Ota lives in Kamakura. I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! The restaurants that were introduced to us were all very unique and the food looked delicious!

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

Koshino-Hachiho Junmai Sake This is also a brand new to me! It is a light and dry sake with the main flavor of rice. It is a typical food sake that does not interfere with the taste of the meal.

This one was given to me in return for sake I sent to my boss, and it's my first Fukuoka Prefecture sake! I didn't know what to choose when it came to Fukuoka sake, so I'm very grateful to be able to drink it in this form! It is a well-balanced and delicious sake. The most wonderful thing about this sake is that it is fire-aged, so it is hard to lose this flavor. It tastes great even after a few days. Although there is sweetness, it does not bother you too much because the main flavor is umami. What is this feeling of being able to drink without getting tired of it? It is not so much sourness, bitterness, or astringency, and it is strange that it is smooth but somehow deep and earthy. Actually, I forgot to post this post after drinking it, but I had this one for New Year's Day. This kind of aromatic and light sake was definitely a good match for Japanese dishes like Osechi. My first Fukuoka sake was a simple and good sake.

I bought it at a product show the other day. I had never heard of this brand, but I tasted it and liked it. It was 19 degrees, so I drank it lightly on the rocks. I paired it with stewed daikon radish and shellfish sashimi as the cold weather deepened. It was moderately dry and went well with sashimi.

We were told to drink our brewery's sake hot, so we tried heated sake for the first time. It was an aged golden color with an aroma of honey. When I first drank it, I was choked up, but when I regained my breath and drank it, the richness of the sake came through. Unlike the aroma, the spiciness of the wine is more pronounced, but as the temperature drops, the sweetness comes out. I enjoy the change in flavor, and I feel like I don't get drunk at all.

It is not sake, This was delicious. ‼️ It is a blend of Kasagi's yuzu juice and "Onnajojo" ginjo sake. It is so thick and sweet that you would think it was juice, but you don't feel much alcohol. It has a nice aroma and the bitterness of the yuzu makes it refreshing and easy to drink. Not bad!

I asked the lady at the store to recommend a new arrival, and since Hayashi was not yet available, I bought a bottle of Kurobe Pincer from the same brewery 😚. The aroma is not so much but a little peachy 🍑? It is fresh on the palate with a gentle sweetness and rice flavor 🌾😋 It is a delicious sake that finishes with a bit of an alkali aftertaste 😆👍✨.

Two years ago 🚗 I visited Minami Haga, a roadside station near a sake brewery, and checked in 😅I bought a mini bottle of Banshu Ichiken and a bottle of Old Pine Sake Brewery's Sansho as a souvenir. Sanyo Bai Sake Brewery and Old Pine Sake Brewery are almost across the street from each other, about a minute walk away, so I recommend you visit both of them 😊. The Sansho is a regional brand 😃👆👆 Like the Banshu Ikken, the Sansho Junmai Ginjo is also made with Hyogo Yume Nishiki sake rice. Maybe it would have been better to warm it up 🧐. Souvenirs from a trip to see the autumn leaves at Momijiyama in Yamazaki, Shiso City. Currently, there are two remaining sake breweries in the city, Sanyo Sake Brewery and Old Pine Brewery, but until 40 years ago, there was another brewery, Honke Monzenya, which brewed and sold a type of sake called sansho (three laughs). The building of the Honke Monzenya still remains, but in order to make the most of the historical landscape where sake breweries line up from Sanyo Bai to Laematsu and Honke Monzenya, The Yamazaki Central City Area Revitalization Committee (Good Town Project) was formed, and over a period of two years, "Sansho" was revived! I bought this bottle at Belk's on my way to work because my body was in need of a drink. I got the impression that it is not a traditional sake, but a modern, clean or refreshing drink. And the specs are Rice used: Domestic rice (both rice and rice malt) Polishing ratio = 50%. Sake meter = around 2.0 Acidity = around 1.4 Amino acidity = around 1.1 (From the brewery's website) If you are going to drink a cup of sake, you want it to have this level of quality. This is a bottle from a long-established brewery in Handa, Aichi, which has been in existence since the Edo period.
