Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

Tonight, our first series of impactful jackets here 💁. It's Taxi Driver🚕🚕🚕🚕. It was shipped from the brewery in April this year, but what a H30BY (R0BY) and it's a 5 year aged sake 😆. The aroma of old sake, which also smells like Shaoxing wine, is in full swing from the moment the bottle is opened 🤣. It was served cold, but it is easy to drink because of its acidity. It would be good to drink it warmed up in the fall. ☺️ I wonder if it would go well with Chinese food since it has a Shaoxing sake-like flavor, and I'm going to research how to drink it based on other sakewa reviewers 💪. But it's a very intoxicating drink so I'll stop after one cup 😓.

First drink. Weak fruity feeling that I didn't imagine from the label that has impact. But it is also full. There is a miscellaneous taste (my personal feeling) like the Yamahai brewing style with low rice polishing, but it is a moderate level, so I feel it is unique. It has just the right amount of sweetness to satisfy my preference for sweetness. I enjoyed it with a plate of delicious sashimi (´ω).

It is not sake, This was delicious. ‼️ It is a blend of Kasagi's yuzu juice and "Onnajojo" ginjo sake. It is so thick and sweet that you would think it was juice, but you don't feel much alcohol. It has a nice aroma and the bitterness of the yuzu makes it refreshing and easy to drink. Not bad!

Souvenirs of Saga 🤗Chapter 1 The top aroma is like red miso or buckwheat flower honey, the type I haven't tasted lately. 〰︎ As the temperature loosens up, it has a fruity bitter chocolate flavor with a strong acidity 😚 I thought I remembered smelling that aroma of BASE BREAD chocolate somewhere 😚 It seems to be a slightly classical rich dry type, but it had an interesting flavor........ I almost ate too much of it because the oily fried squid geso tasted strangely delicious 😅. Thanks for the food!

Saga, Saga Prefecture, Japan. Saga Brewery Co. Umenomado Special Junmai 3㌥ I tasted and bought this at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. I actually had it yesterday, but since it is a special junmai, I compared the two. We will drink it cold. The color is clear and almost colorless. The top aroma is mild and not very noticeable. The taste has a robust rice flavor, sweetness, and a nutty, chocolate-like complexity. It is rich and mellow, but compared to Saka, it has a more traditional country-style flavor. The aroma on the nose is bitter and chocolatey. By the second day, the chocolaty flavor has settled down, and a clear, mineral, full flavor emerges, making it easier to drink. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio: 60 Alcohol content: 15 to 16 degrees Celsius

Saga, Saga Prefecture, Japan. Saga Brewery Co. Saka Tokubetsu Junmai Nama Nama Zake. Purchased after tasting at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. Saka is a new brand, and is apparently better known as "Ume" (window plum). It is served cold. The color is clear with a slight yellowish tinge. The top aroma is mild, with a slight hint of alcohol. The mouthfeel is smooth with a slight flocculation, and it does not feel fresh to the extent that it should. On the palate, there is a little bit of juicy acidity, a little bit of tangy alcohol, and a nutty, full flavor that spreads. The aftertaste is a bit of a sharp spiciness, with a slight throat hit after swallowing. I bought it thinking it would be sweeter and more umami, but it was surprisingly dryer than I expected. Return Series. With the concept of "to the world", alcohol 12℃. It's something I've been curious about because of my perception that it's an emerging force in Niigata. It's a white wine taste. Almost a white wine. The sourness of the wine was so strong that I gave up on it.

A 50% polished Junmai Daiginjo, Meguro Gorosuke, from Tama Flavor in Uonuma City (formerly Morimon Village), Niigata Prefecture. As is typical of Uonuma sake, it is a ginjo-shu that is not overly aromatic. I remember drinking it once at Tatsuya, a yakiton (grilled pork dumpling) restaurant in Numabukuro on the Seibu Shinjuku Line.

Lighter than expected, sour, sweet and ricey. I was worried before drinking it because it had quite a bit of color, but I was relieved to see the explanation on the back label. The Tama Flavor brewery is known for its regular brand, Tama Flavor, which is a light, dry sake that is the king of Uonuma, but they also brew Itkey and 46°C Echigo-Bushi (Samurai), which I recognized once again as a brewery with a very sharp personality.

The taste is rich but light on the palate. It is even softer when heated. It has a moderate aromatic richness and a little bit of spiciness. It has a good balance and can be served with a wide range of food. It is a limited edition sake, but it has a standard taste. Mr. Ota lives in Kamakura. I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! The restaurants that were introduced to us were all very unique and the food looked delicious!

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

(The regular product has a ripeness, but this one is relatively refined. It looks light but has a solid core, and there is still a sense of ripeness in the back. It shows its full potential when heated. The richness comes out well. When it cools down, the sweetness comes out well. I bought it from a sake brewer, and when I asked for sakekasu, they gave me a lot of it! Maybe it's because I buy from the sake brewer sometimes. It is very delicious when it is baked!

Not grilled oysters, but raw oysters. A light sake with a strong acidity. I think it goes well with fish in general. It removes the fishy smell of fish, but it's still refreshing, so it's perfect as a mealtime drink. It also goes well with oily food.

Next to Kaiharu, your first Horaizuru Have you ever had this? I thought it was Houraizumi at first 😅. At first I thought it was Houraizumi😅 It seems to be brewed in the basement of an apartment building in Hiroshima city. It's like Nippon Izumi from Gifu. This one was purchased at Yamada Sake Brewery in Edion, Hiroshima. Sake Sho Yamada seems to have a lot of famous brands on display, but this store also seems to have a local sake corner! The liquor department at EDION Namba is also owned by Yamada Sake Brewery, but it's bigger than the one in front of Osaka Sake Brewery. Maybe because of the upcoming Expo 🤔. Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

I drank Handa Go after reading the comments from others. It does have a yogurt-like mouthfeel, but afterwards it feels like water and is easy to drink. It is not mellow and goes well with Yamachan's spicy food!
