After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

Karahashi label by Homare Sake Brewery. Unfiltered unpasteurized sake made from sake rice Yume no Kou. Fruity ginjo aroma. Although it is unfiltered raw, there is no bitterness or peculiarity, and the impression is of a soft, sweet, umami taste. Last week I visited Dewano-Fuji at Hankyu Department Store, but I went to Umemoto Sake-ten in Nishinakajima because I thought I could find more variety at a special distributor. (Note that they have moved from the location shown on the map of Sake-no-wa, and they have a corner bar inside after 4:00 p.m.) I was a bit lost, so I asked the waitress and she let me try a sample. Melon-like fruity sweet taste. Slightly refreshing? It was delicious, but Junmai Arabashiri seemed rarer, so I bought that one 😊.

The beautiful kaleidoscope-like label is impressive. The taste is sweet with a hint of bitterness at the end. It is refreshing and crisp, but the screw was unusually hard to open, so I think it should be improved. The Junmai Unfiltered Nama-jyu I drank at the end of the year was cheaper and much tastier. I don't know if it's because they use Miyamanishiki, but it tastes a little like the Jokigen I had the other day. A bit 🍇ish.

Tasting at Kamoizumi. There was no one else there, so I was able to take my time tasting. This sake is 100% Yamadanishiki. It had a familiar flavor and was delicious. I guess it was because most of the sake we tasted were from the Hiroshima Hachitan series.

I'm not sure how to read it lol. It's a Junmai Ginjo, but the aroma has a grainy feel to it. When poured, it's a bit of a yamabuki color, with a hint of old sake in the beginning, but as it progresses, it develops a nice richness and flavor✨.

It's like a sweet and sour apple with a refined taste of koji. For a sake of this time of year, there are no unusual spikes in the flavor. If you think the taste is similar to something, it is similar to La+Yachiyo ROOM by Yachiyo Shuzo. I'm convinced that it has a sweetness like a pear as well as an apple. If you mix it with nigori, it becomes more dry even though it is energetic. It should be easy to drink even for those who are not that good at sweet taste.

Another brand of YAMAMORI Purchased at a supermarket near my house. It is a Hachitan-Nishiki, a specialty of Teshimaya, and the taste is almost the same as Yamori's.
