Hakone Drink Comparison Set (2) On March 1, after a year-long event, I went on a trip to Hakone as a way of consolation! The local sake was served to compare with Japanese kaiseki. It was my first time to try Hakonezan! This is the spiciest sake in the group. It is a dry ginjo-shu as you might imagine, but it is moderately rich and very good as a mid-meal drink. Of course, it goes well with ingredients as they are, but it also goes well with dishes that have been added, such as those using dashi (Japanese soup stock)!

Home drinking. 100% Yamadanishiki produced in Shiga Prefecture The color is slightly whitish. The mouthfeel is clean and mild. The taste is sweet like green apple. The acidity is blended with sweet and sour. Is it sweet? Is it sweet? But then the sourness appears and has a big impact 🤩. The aftertaste has the umami of the rice, which is even more pronounced when combined with the acidity. I felt that the hint of aroma also penetrated through. This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

It was purchased at the Yukiguni Shuho Kanazawa-ya Sake Shop and was fire-aged in August 2021. It was a bottle that had been sitting in the refrigerator. It is brewed with Hachitan-nishiki grown under contract with four farmers in Kakizaki, Joetsu City, and sold year-round. Polishing ratio is 55%. Alcohol level is 15 degrees Celsius. Sake degree is +3 and slightly dry. Hachitan-Nishiki is a sake rice that has both a rich and crisp flavor. It is said to have an aroma that sometimes reminds one of green grass. When opened, the aroma is fresh and elegant, with no hint of sweetness. When poured into the sake cup, it is smooth and has a slightly yellowish flavor. Taking a sip, it is smooth on the palate, with a light, dry taste spreading through the mouth with a slight sourness, but there is a lingering aftertaste with richness and gorgeousness at the back. It is a little dry, which is my recent favorite, and it is a good bottle to be served well chilled. Delicious 😋.

New Year's sake (2) - Women's tears When I went back to my parents' house, my father bought this sake. It seemed to be a recommendation from Aoki Shoten. With all due respect, I had never heard of this sake and it was unknown to me. When I opened the bottle, there was not much aroma. Had this special high grade sake from Oujiman brewery. It has a 6% rice polishing ratio!! I loved its mellow fruity notes and a elegantly clean finishing, it keeps tempt you to drink it. I'll definitely buy this again next time.

I drank it in a wine glass. As written, it has a strong aroma of banana and melon, and the melon aroma is very much present in the mouth. Later, I tried it hot, and it was very easy to drink, with a mellowness and sweetness that increased.
