Went to a sake brewery in Yamaguchi last month and bought it. (Thank you kindly even though I went there almost out of the blue 🙇 ) Bought this year's freshly made, but it's been a while (not that freshly made doesn't taste great) SANTOUKAI Junmai Ginjo 100% Yamadanishiki Soft with a hint of acidity. Because it's a cold sake, it's clear and refreshing. It is quite gentle. Slightly sweet It doesn't interfere with your meal. The atmosphere of the brewery and the people who helped me were unpretentious without being overbearing (my own image 😁), but the sake also seems to be a little similar 😆 (my imagination 😝)

I bought this sake when I visited Wada Ryu during my Ueda brewery tour the other day 😀. The timing of the brewery's preparation did not coincide with my visit, so the fridge was empty, including the sake I was looking for, Wadaryu Tomisui🤣. The president of the brewery was very apologetic when I told him that I had come from Osaka, and he brought me this junmai sake, saying that it was the only one they had in the brewery at the moment 😀 The aroma was junmai, and the taste was very typical of junmai sake. The aroma is very Junmai-like, simple and reminds me of freshly cooked rice 😀 The taste is also very robust. The taste was also very rich, with a hint of sweetness from the rice as the main taste 😀. It was quite different from our family's usual choice, but sometimes this kind of sake is also instructive 🙆. Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.
