@Japanese Sake BAR Sake Iki Shin Garyu We didn't go to the brewery because it was too far away, but Aizu Sake Brewery's Aizu is located in Minami Aizu Town. In Tokyo, you sometimes see Yamanoi. The aroma on the nose is fruity. In the mouth, it has a clean sweetness and umami that is typical of daiginjo-style sake. The taste is elegant and finishes smoothly. It was quite delicious 🍶✨️

Brewery Limited ✨️ brought in by a regular customer GOTCHISO-SAMATSU I just had Yaezakura the other day, so it was easy to compare: ☺️ It's a bit peculiar after all! But I'm lucky🍀🍀 to be able to drink this rare limited edition sake.

Next was the Ryusen Yaezakura Junmai Sake Takumi no Omachi. Compared to the Yamada-Nishiki we drank earlier, the taste is a little more robust. The aroma is almost imperceptible, but the sweetness and umami of the flavor is stronger than that of Yamadanishiki. I was full of anticipation, wondering what this sake, which won first place in the Governor's Award, would taste like! I went to the brewery and asked them about it, and they told me that they will start selling it next week. I am looking forward to it! It was delicious! (^o^) P.S. I bought some fire-activated nigori at the co-op because it looked interesting... so much moromi... ！！！！！ I looked it up and found that there is also active nigoromi... Sorry I only have a picture of it after mixing! I know the nigori in Niidashizenshuu and the nigori in this season's Sasasamune have a lot of moromi, but this is probably even better than that! The impact is amazing! Isn't it about 70-80% of the bottle? What is this? When you drink it... it's thick! As you can see, the rice flavor is coming forward. There is a slight alcohol taste, but it also has a banana smoothie-like flavor that is not too classic, making it easy to drink. It is thick, but if you cool it down and drink it, it is surprisingly easy to drink. In any case, it is quite strong, so it would be good with Chinese dishes with strong flavors. At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.
