The aroma is fruity with a hint of sourness. The label says it is mellow and umaguchi, and while it is certainly umaguchi, it is characterized by its sharpness, leaving the impression of acidity and dryness in the aftertaste. It has a strong sense of transparency and is both mildly sweet and spicy, making it a good mid-meal sake. It has a wide strike zone for temperature, and can be served cold, of course, but it also shows its potential at temperatures that are close to room temperature.

Furusato Tax: Hakuro Taruzu Drinking Comparison (2) Drinking comparison of 2 bottles of Jun Daigin set of Hakuro Taruzu with the Furusato tax return gift from Tsuruoka city. ✌️ The second bottle is Rashinban, my personal No.2 brand from last year. Ordered again this year with Furusato tax return 😂. This is an ice-aged Jun Daigin made from the beautifully named Yuki-Onogami sake rice, polished to 33%. The top aroma is tropical fruit🥭 type. On the palate, the sweetness and umami are firm, but the finish is quick and curiously refreshing. The aftertaste is full of ripeness and spiciness, and the taste is delicious from start to finish.

A liquor store in Yamagata recommended this sake to me. I bought it because it's a Junmai Daiginjo made by polishing a rare type of sake rice called Yukimajin up to 39. The alcohol content is high, but the taste is refreshing, sweet and mild. It's rich with flavor but crisp after drinking it 🙂 It smells very fragrant and makes me happy😇

I bought some fire-activated nigori at the co-op because it looked interesting... so much moromi... !!!!! I looked it up and found that there is also active nigoromi... Sorry I only have a picture of it after mixing! I know the nigori in Niidashizenshuu and the nigori in this season's Sasasamune have a lot of moromi, but this is probably even better than that! The impact is amazing! Isn't it about 70-80% of the bottle? What is this? When you drink it... it's thick! As you can see, the rice flavor is coming forward. There is a slight alcohol taste, but it also has a banana smoothie-like flavor that is not too classic, making it easy to drink. It is thick, but if you cool it down and drink it, it is surprisingly easy to drink. In any case, it is quite strong, so it would be good with Chinese dishes with strong flavors. It would be better with Chinese food that has a strong flavor, such as stewed eggplant, grilled fish, or simmered dishes, as the richness of the sake would drown it out. I think I'll try it with Bean-curd soup with Bean-curd soup with Bean-curd sauce. LOL! Thankfully, it is fire-roasted, so you can drink it slowly and leisurely over several days. Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.
