Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The sake is of 90% polishing ratio. A very bubbly sake with fragrance of white flower, white peach and apple. The texture is light, with flavours of grapes and pear, also tasted sour. Not much umami but it gets more alcoholic flavor when it gets warmer. Best if drink chilled.

In the fall of 2023, I ordered Ken Aizan, and for one reason or another, when I first tasted it a year later, I was surprised by its flavor and taste. When I learned last month that Ken-Aizan was being shipped again, I immediately pre-ordered. Once again, the flavors are wonderfully complex, the body is very well balanced, the bubbles are subdued, and it is an excellent match for meat dishes and curries. Considering the price and difficulty of obtaining this sake, I believe it is not at all inferior to Sansho's Kako and will certainly be a repeat purchase.

I finally found Miyoshigiku 🍶, a sake that goes well with the specialty of Miyoshi City, Tokushima Prefecture. The rice is Omachi, my favorite sake rice 😍a sake that goes well with venison, but...I can't get venison! The aroma is sweet and fruity like cider...and the mouthfeel, despite the aroma, is robust! The rice polishing ratio is 60%...so it's like a junmai sake...it's a food sake that goes well with meat dishes! I think it's possible!

At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region.
