It is Junmai Daiginjo from Ajigasawa 🍶.
I remember hearing from the brewer that Ajigasawa is a wholesaler's PB... 🤔.
The first aroma is a faint sweet aroma of rice.
When you put it in your mouth, it has a moderate sweetness and a slight astringency.
It is a little bit hard.
The proprietress said the special junmai from the same Ajigasawa was delicious 🙄.
Good evening, Mr. Matsuchiyo.
I read on the liquor store's instagram that it's a PB from a wholesaler in Shizuoka 🤔.
When I drank it last year, it tasted a little bad😅.

Sunflower
60%.
It was 18% alcohol!
I felt it was strong as it should be! LOL!
It has a unique flavor, but it also has a nice sweetness that makes it interesting!
I can't be adventurous when drinking at home because the portions are so large, but when I drink outside, I can be adventurous even if it doesn't suit my tastes!
There was an interesting kisai called "Tokusen Junmai Aged Nama Sake" (special junmai aged sake)!
It is said to be aged in ice temperature.
I don't know about the mellow acidity, but I think I understand the expression "clear umami"!
4.5 points
I was surprised at the sweetness of this wine when I first started drinking it, but as I got used to it, the sweetness became more pleasant!
I don't know if I'm getting used to it or getting drunk! LOL!
But it's good!
The ginjo aroma, the rice flavor, and the alcohol taste are all there and amazing. It's amazing.
It's delicious, but I feel like I'm going to get really drunk.
Today we have Ajigasawa Special Junmai Sake from Ozaki Shuzo in Aomori Prefecture: ❗️
The aroma has the faint smokiness of old sake. After a sip, a mellow texture on the tongue is followed by a mildly astringent taste. After that, there is a smoky aroma from the nose. ❗️ Good as a food sake. ❗️ interesting sake. ❗️
[Drinking sake with ramen at Pojiya.
After finishing the three different kinds of sake, my friend who was drinking with me ordered a glass of sake, and I was curious about the sake that came out, so I decided to order another one myself.
Ajigasawa Yamahai Junmai Nama-junmai Nama-narashu.
It has a fruity aroma with a floral ointment-like smell, a clean but juicy sweet flavor, and a sharp spiciness that lingers on the tongue and throat.
First "Ajigasawa" 🎉.
Aomori's "Tasake" and "Toyobai" have a sweet-tasting image, but it has a very distinctive aroma and a fresh spicy aftertaste, but it still tastes beautiful due to the abundance of melted snow 😋.
I didn't realize how much effort Poziya puts into their sake 💦.
Now that I've made a drunken hashigo-zake course, I'm sure I'll be a heavy drinker from now on ✨.
Like Kitanohomare, it was purchased at a liquor store where Nemuchi and I stopped by after the Ogimachi Park event.
I'm not sure what brands they carry, but I get the impression that they stock a lot of Yamamoto, Eiko-Fuji, Chuai, and Yonesuru. I also wonder if they have a better stock of sake bottles.
The first impression is light and refreshing, and the second half has a chemical-like umami and a strong alty taste.
It's not my favorite type of flavor...
I don't think you can tell it's a daiginjo if you drink it blind.
When I drink it again, I feel acidity and a hint of sweetness.
I think the sweetness has increased a little, so the nuance that I don't like has lessened.
I don't care what you think, but isn't the balance bad because the seal on the bottle is the size of a bottle of raw sake? I thought so.
The regular brand name of this brewery is Ando Suigun, but Ajigasawa seems to be a PB of a sake wholesaler in Shizuoka.
I saw it for the first time in Tokyo and couldn't help but ask for it. Is it a rare sake? I am going to Aomori next month, so this is my preliminary study!

Continuing the Aomori series is "Ajigasawa".
This is also perfect for maki rolls.
It has a sweet taste and enhances the flavor of the snacks.
Clear and colorless. The aroma is reminiscent of rice straw. The aroma is medium-strong. Smooth texture. The sweetness is reminiscent of tortoiseshell candy. Flavor of rice derived from raw materials. Aroma reminiscent of custard cream. The mouthfeel is rich. Firm umami with an astringent taste. Medium lingering finish. Mellow sake.
Lately I have come to realize that my favorite type of sake is dark, sour and deep, and when I see the words "unfiltered, raw sake," I start to drool.
Ajigasawa is made by the Ozaki Sake Brewery, which is famous for Ando Suigun.
The first aroma is sweet and sour with a hint of soy sauce.
In the mouth, it has a strong acidity (acidity 2.7) and umami with a hint of sweetness.
It is rich, sour, drinkable, and delicious 🍶.
