Private brand of Fujimura Sake Brewery in Hofu City, Yamaguchi Prefecture The sake is named after a local poet and the owner of the brewery. I was impressed with the Miyamanishiki Hi-Kiri that I had previously tasted, so I tried the nama-shu as well. It is fruity, sweet and delicious, but a little refreshing. It also seems to have more acidity. The hi-ire version seems more cohesive, but I personally prefer the nama-zake. It tasted good when it was first opened, but on the third day, it's not so good. The bitterness is getting much stronger. I think I would prefer the more stable fire-roasted version.

Misato Nishiki was developed? ◉ Oku Shimizu Junmai Ginjo Misato Yukika Uses lavender yeast collected and cultivated from white lavender. It is light and easy to drink with a delicious acidity. The soft brewing water is from "Smile Shimizu" located on the premises, one of the Rokugo springs selected as one of the 100 best waters in Japan. There is also the Takahashi Shuzo Brewery of Horinoi in Iwate Prefecture, the Takahashi Shuzo Brewery of Tohokuizumi in Yamagata Prefecture, and the Takahashi Shuzo Brewery of Shochu Hakugaku, and the Takahashi Shuzo Brewery of Choryo was renamed to Aoi Shuzo.

The first saké I had last time was a clear saké of Yumeginko from Bishu Kotobuki with No.7 yeast. It is a draft sake, but it was stored at room temperature at the store, so we served it as it was. For today's sake, I chose a Junmai Daiginjo from Kuchiman 😀. We compared the tasting sakes, one brought to room temperature for tasting and one kept chilled, and this one for tasting brought to room temperature might taste better than the chilled one 🤣. The chilled one is just too beautiful to swallow without anything stuck to it😅. The room temperature one spread the sweet and delicious flavor and filled my mouth with deliciousness😇

National Sake Fair 2025㉓ Ibaraki Prefecture⑭ Nomura Brewery in Joso city. I thought that there would be a lot of XX beauty if I look for it 🤔. There seems to be a French restaurant attached to the brewery! I found out that the regular junmai ginjo has a more classic label. This one seems to be a modern type named "Grand", so I wonder if they are making a modern label? This sake won the Platinum Award at the 2017 KURAMASTER Sake Competition Polishing ratio 55% Yamadanishiki from Ibaraki 15.3% Sake degree +1 3000 yen Fruity and sweet but a little strange? Maybe the taste of Senhime is still in the boar's mouth😅. I forgot to take a picture, so I borrowed Nemuchi's picture.
