Uses lavender yeast collected and cultivated from white lavender. It is light and easy to drink with a delicious acidity.
The soft brewing water is from "Smile Shimizu" located on the premises, one of the Rokugo springs selected as one of the 100 best waters in Japan.
There is also the Takahashi Shuzo Brewery of Horinoi in Iwate Prefecture, the Takahashi Shuzo Brewery of Tohokuizumi in Yamagata Prefecture, and the Takahashi Shuzo Brewery of Shochu Hakugaku, and the Takahashi Shuzo Brewery of Choryo was renamed to Aoi Shuzo.
