Went to a sake brewery in Yamaguchi last month and bought it.
(Thank you kindly even though I went there almost out of the blue 🙇 )
Bought this year's freshly made, but it's been a while (not that freshly made doesn't taste great)
SANTOUKAI Junmai Ginjo
100% Yamadanishiki
Soft with a hint of acidity.
Because it's a cold sake, it's clear and refreshing.
It is quite gentle.
Slightly sweet
It doesn't interfere with your meal.
The atmosphere of the brewery and the people who helped me were unpretentious without being overbearing (my own image 😁), but the sake also seems to be a little similar 😆 (my imagination 😝)
Shin-Yamaguchi business trip (3) Shinkansen
On the way back from Shin-Yamaguchi, I visited Izakaya Shinkansen after a long time 😆.
Drinking Sandesi that I got yesterday at Kinko's Sake Brewery,
I asked if they had 300ml of this at the brewery yesterday. I asked if they had a 300ml bottle of the Junmai Ginjo that I bought in a 4-quart bottle, so I asked if they had a different one. The one they brought out was still freshly made! The label was still fresh! I was so excited 😁.
I told him it was fine if it didn't have a label on it (it's rare), but he said no, he called someone and went to the trouble of putting it on (thanks 🙇 ).

A little sweet and sour.
I remember that the last time I drank it, it was a little more dry and refreshing, maybe because it was cold sake.
But this one is not so called sweet, but I can feel the sweetness of the rice.
It's a nice taste!
This time, I brought a glass (ochoko size) as a strong helper 🤣🤣.
The possibility of having someone next to you increases as you go from Hiroshima to Okayama to Kobe. I'm a bit nervous😅😅

The day before, I had no special plans, so I arrived in Yamaguchi a little early and went to the Kinko's Sake Brewery (one stop from Shinzanguchi), which I thought would be a good place to visit.
I was allowed to sample some 🍶 and was told to "take your pick from this list" 😆! I was so excited 😆.

Beautiful, delicious, soft acidity and sweetness!
ZORRO
This is another beautiful sake, but a little different from Junmai Ginjo.
It has more acidity and fruity taste than Junmai Ginjo.
Daiginjo
Even clearer and more beautiful.
I had called in advance (but an hour before) and felt bad that the person at the brewery had to deal with me. But they treated me well! 🙇.
The nigori and junmai ginjo are new sake, and the other sake are this year's. The bottles are ready, but will be bottled after tomorrow. It's ready, but they say it will be bottled after tomorrow. I bought a freshly made Junmai Ginjo because I wanted to try it. There were also some other rare sake (aged sake) that I couldn't decide which to buy..,

When you have so many bottles lined up for you to choose from, you'd think it was an all-you-can-drink place 🤣 (not true!).
It's a bokkiri, but it was a kind brewery 🥰.
Work in Yamaguchi was over and I was on my way home.
It takes about 4 hours by Shinkansen to Shin-Yokohama, which is quite long!
Today, let's go back home after drinking as much as we do at Izakaya Shinkansen.
Today was so busy that I didn't eat lunch 🥴.
However, almost the last bullet train, and around Shin-Yamaguchi station, there are not so many places to prepare 🤔.
At a souvenir shop in the station, I got a hamo no tsukurin (pike conger eel) and gairo for dessert (I heard it's a bit different from gairo in Nagoya)!
(I heard it's a little different from gairo in Nagoya.) They didn't have any bento-like bento, so I went to the combined 7-Eleven and Souvenir Kaido store inside the ticket gate.
Seriously 😱.

I hadn't even eaten lunch 😭
So I switched to something that looked like a prepared dish from 7-Eleven.

A little yellow.
At room temperature, it feels like it's mellow in the mouth.
A bit like honjozo? It's a solid taste, I don't dislike it.

When I went to Yamaguchi on business before, I brought back a bottle of sake I'd never had before, just for the sake of it.
Yamatohka: Sake made with rice from the Saito Shizuku

Taneda Yamatohka was born in Hofu and once lived in Ogori (around Shin-Yamaguchi station now?). (Around Shin-Yamaguchi station now?).
Looks a little yellow.
It's a little yellow in color. It's a little sour, but you can taste the rice.
But you can taste the rice flavor, not sweet but tasty.
This is delicious 😋.
On the second day, it tasted even better 😋😋😋😋.

Refreshing aroma of sweet ginjo sake. It enters the mouth with a soft and slightly sweet aroma, but slowly fades away after the sweetness is well understood as a taste. Delicious.
It has a rich, orthodox ginjo aroma followed by a crisp, clean taste. I thought it would have an atmosphere that would appeal to those who like dry sake. However, since it is a tobidori, the price is quite expensive...
The less sour one ⚫️⚫️ acid, is it called organic acid? It's like it's in full bloom.
Sweet delicious this liquor 🍶 fruit🍋 rice🌾 dead leaves🌱 banana🍌 mixed with bitters, it's harmonious.
When warmed to 45°C, it's a fine chocolate🍫 and the aroma is now grape🍇 dried fruit🤤.
