開栓直後はやや甘口で旨味が強い。 美味しいけど沢山は飲めないかと思ったけど、 あけてから何日か置いてみると、淡麗で凄く飲みやすくなり、凄く美味しかった。 折角の生原酒なので、邪道な飲み方ですが(笑)

Shizen Hometown Refreshing Refreshing, refreshing, and delicious. This may be the best sake I have ever tasted. Pleasant sweetness with a rummy feel. There is a slight alkalinity in the latter half, but it disappears nicely in the end. It is not flashy, but it has a moderate sweetness and calmness, and is easy to drink. It is easy to drink. Purchased at the Takashimaya Sake Festival. The one that impressed me the most after tasting several kinds of Kunihiki. It is sweet and fruity. It has a sourness like citrus. It is low in alcohol but very drinkable. However, I personally don't like the top flavor. I can't explain it well, but it smells sweet? I can't explain it well, but it smells like a sweet smell. After drinking it, it tastes fine, but I don't like the aroma when I put it close to my nose. It's difficult to describe... It might be quite tasty with meat as it says on the back 🤔.

Faint golden color with a grain aroma. Bitter, astringent, and acidic tastes overlap each other. If you expect the fruity and sweetness of a typical Junmai Daiginjo, you are way off. I drank it cold, but I might try warming it up. The Nishijin textile label is cool❗️.

Weak smell of thin apple slightly sour. Ohhhh good. Sparkling lemon-like acidity with a hint of sweetness, a little heavy on the acidity and rice flavor, then fading away to a gentle chile of bitterness. The acidity is firm and not too thin, and there is a slight sweetness, but the sweetness does not overpower the sourness and it is very refreshing. As you drink it, it becomes too familiar in your mouth and seems to disappear. When warmed up, it tastes sour and makes you drool from the back of your tongue. The second day. I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

I had decided on Mariko's Sake for my first visit to Saitama. The Sato Sake Brewery is run by Mariko Sato, the toji of the brewery. There is almost no alcohol taste, and the spiciness comes later with more umami. It is sweet and umami, but the spiciness lingers a little.

Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

Type: junmai daiginjo, rice polishing rate: 50%, alc.: 16% Floral aroma, vanilla, marshmallow and a little bit of savoury aroma. Flavor feels dry with sharp acidity and bitterness of alcohol. Earthy flavor lingers for a while. Not too good not too bad. Decent price here in Europe.
4 points - so-so? More acidity than Junmai Namaishu?

The first ooki tree When I hear the word "Yamahai," I have an image of strong acidity. This one, as usual, was characterized by its sharp acidity. The top-tasting aroma has a sense of sake behind the acidity. The mouthfeel is rather light, probably due to the crisp acidity. The flavor is not as strong as it should be. The aftertaste is full of sake-like aftertaste, followed by sourness and a strong bitterness. A closer look reveals that it is 18 degrees Celsius. No wonder it hits the back of the throat so hard. The 5th Sagajo Shoten Presents at the 5th Bishushu Raku Kushan Shokai 😃. We were honored to have the opportunity to visit the Umaue Sake Brewery in Hiroshima ❗It's a rare sake to drink, and we had to have another one 😉. So this one is made with Ginpu! The other "Hodashi" is made with Kitashizuku and they are offering a sake that will make the people of Hokkaido happy 🎵Sounds great ✨.
